Like Peanut butter buckeye balls but with a crunch! If you like the salty taste of pretzels and the crunch they bring, you’re going to love these chocolate covered peanut butter bites. A sweet and salty bite-size snack perfect for your potlucks, parties or easy after school snack.

What you'll need to make peanut butter pretzel bites

Ingredients for peanut butter pretzel bites.

Homemade peanut butter bites are easy to pull together for the holidays or any night of the week. All you need are a few simple ingredients to make these addictive bites: crispy mini pretzels, creamy (or crunchy!) peanut butter that will be mixed with unsalted butter and powdered sugar, and rich chocolate chips with optional coconut oil for melting.

Your friends and family will LOVE devouring these treats anytime you decide to make them. They are so good!

Ingredients

  • ½ cup creamy peanut butter
  • 2 Tablespoons unsalted butter softened
  • ½ teaspoon vanilla extract
  • 1 cup powdered sugar
  • 60 Pretzel snaps or mini pretzels
  • 6 oz dark chocolate chips
  • 1 teaspoon coconut oil optional

Instructions

  • In a bowl, mix together creamy peanut butter and softened butter until creamy and smooth. Use either a wooden spoon or a hand mixer. Ensure there are no clumps of butter.
  • Add vanilla extract and stir to combine.

  • Dump in powdered sugar all at once and using a wooden spoon or gloved hands mix up until it comes together. Although it may appear there is too much powdered sugar, it will come together and create a dough similar to cookie dough that is slightly sticky.

  • Scoop 1 teaspoon balls using a scoop or spoon. Cut each teaspoon sized ball in half and roll it between clean hands creating a smaller dough ball.

  • Lay down a piece of parchment paper or wax paper on a cookie sheet that can fit into your refrigerator. Layout 30 pretzels. Place peanut butter dough balls on the pretzel and then sandwich them together with a second pretzel.

  • Melt the dark chocolate and if you will be using it, add the coconut oil. Melt chocolate in the microwave in 30 second increments, stirring each time to ensure the chocolate is velvety smooth.
  • Dip each peanut butter pretzel bite into the melted chocolate stopping halfway up the pretzel. Lay each dipped bite onto the parchment paper on your cookie sheet.

  • Place the entire tray in your refrigerator for at least 30 minutes to allow the chocolate to harden.

What is a good way to measure peanut butter?

Measuring peanut butter can be quite difficult because of how sticky it is. With these tips, it will be no trouble at all! Spray the inside of your measuring cup with non-stick spray. Pack the peanut butter in and level for proper measuring. Use a rubber spatula for easy removal.

  • It’s essential to cream the peanut butter and butter together until smooth before adding in the powdered sugar.
  • Peanut butter pretzel bites is a great make ahead recipe that is easily doubled or even tripled.
  • After dipping into the chocolate, you can dip into sprinkles for a festive twist.
  • It is not recommended to use natural peanut butter with the oil on top. This may add additional liquid to the batter and it will be difficult firming up.
  • Salted or unsalted butter can be used successfully in this recipe. The important factor is that it is softened and not melted.

How do Peanut butter pretzel bites differ from buckeye balls?

Peanut butter pretzel bites are very similar to buckeye balls. Usually, buckeye balls are a peanut butter mixture rolled into balls and dunked into chocolate. Pretzel bites use the same type of mixture, and then it’s sandwiched between two pretzels, which adds a delicious crunch to each bite.

Why is coconut oil added to melted chocolate?

Coconut oil is added to melted chocolate to help create a firmer texture to the chocolate. It can also make a shinier finish or help make the chocolate velvety smooth when dipping the pretzels into it.

How to Store Pretzel Bites
