- 1 box (15.25 ounces) Carrot cake mix
- 1 teaspoon baking powder
- 2 large eggs lightly beaten
- ⅓ cup vegetable oil or any light tasting oil
Preheat oven to 350F and line two large baking sheets with parchment paper, se aside.
In a large bowl mix together cake mix and baking powder.
Pour in eggs and olive oil and mix with a wooden spoon or a spatula.
Using a 1 tablespoon cookie scoop from dough into balls and place them 1 inch apart on the cookie sheet.
Bake in the center of your oven for 9-11 minutes.
Serve dusted with powdered sugar or coated with cream cheese frosting.
