Peach Syrup
Homemade peach syrup is a great way to use fresh summer peaches during peach season. An easy simple syrup recipe made with ripe peaches, cane sugar and lemon or lime juice and takes few minutes to make.

- 1 ½ cup diced fresh peaches 300g, about 2 peaches
- 1 cup water
- ¼ cup granulated sugar
- 1 teaspoon lemon juice
In a small saucepan, add peaches, sugar, water and lemon juice.
Stir the mixture and bring to a simmer on medium heat; the peaches will soften after 5-6 minutes.
Take off the heat then take the peaches out with a slotted spoon on an external plate. Mash with a fork then return to the pot.
Return the pot to low heat and continue to cook for another 10 minutes.
Remove from heat, allow to cool slightly then strain into a heat-safe container.
Chill in your fridge.
