- In a medium saucepan, add peaches, sugar, water, and lemon juice.
- Stir the mixture and bring to a simmer. Keep stirring until sugar dissolves and peaches start to soften, usually after 5-6 minutes.
- Take off the heat, then take the cooked peaches out with a slotted spoon on an external plate. Mash with a fork and return to the pot. Alternatively, you can use an immersion blender.
- Return the pot to low heat and continue to cook for another 10 minutes. Remove from heat, allow to cool slightly, then strain through a fine-mesh strainer into a heat-safe container. Chill in your fridge.

Ingredients
- 1 ½ cup diced fresh peaches 300g, about 2 peaches
- 1 cup water
- ¼ cup granulated sugar
- 1 teaspoon lemon juice
Instructions
- In a small saucepan, add peaches, sugar, water and lemon juice.
- Stir the mixture and bring to a simmer on medium heat; the peaches will soften after 5-6 minutes.
- Take off the heat then take the peaches out with a slotted spoon on an external plate. Mash with a fork then return to the pot.
- Return the pot to low heat and continue to cook for another 10 minutes.
- Remove from heat, allow to cool slightly then strain into a heat-safe container.
- Chill in your fridge.
