Tahini pasta sauce

Ingredients

  • 1 cup tahini paste
  • 1 cup warm pasta water
  • Juice and zest of 1 lemon
  • 1 garlic clove minced
  • Salt and pepper to your liking
  • 1 lb pasta of your choice
  • 1 tablespoon olive oil

Instructions

  • Cook pasta , al dente, according to package directions reserving 1 cup of the cooking water.
  • In a mini food processor add ½ cup of the pasta water, tahini, garlic, lemon juice and zest.
  • Process until well combined.
  • Check the consistency if you feel it is too thick mix in more water one table spoon at a time.
  • Taste and adjust salt and pepper to your liking.
  • Drain pasta, rinse with cold water then toss with olive oil
  • Toss pasta with tahini sauce adding more water if needed.
