Bruschetta Pizza

- 1 large 12 inch pizza dough homemade or store bought
- 1 cup cooked chicken shredded or diced
- 1 cup mozzarella cheese shredded
- ¼ cup parmesan cheese
Garlic oil:
- 1 small garlic clove minced
- 1 Tablespoon olive oil
Bruschetta topping:
- 2 Roma tomatoes seeded and diced
- 2 Tablespoons fresh basil thinly sliced
- 1 teaspoon balsamic vinegar
- salt to taste
- dash of black pepper
Optional:
- Balsamic glaze for drizzling
- chopped fresh basil and parmesan cheese for garnish
Preheat oven to 450°F.
In a small bowl make the garlic oil by combining garlic and olive oil. Set aside.
In a medium bowl, combine bruschetta ingredients. Set aside.
Brush your pizza crust with garlic oil and pour the remaining oil over the tomato mixture and mix.
Top the pizza crust with ½ cup of mozzarella cheese spread in a thin layer.
Top with half the Parmesan cheese then layer chicken over.
Spread the remaining mozzarella and parmesan on top.
Bake in the center of your oven for 10-15 minutes or until edges start to brown and crisps up and cheese melts.
Take pizza out of the oven and top with bruschetta mix.
Drizzle with balsamic glaze if desired and a sprinkle of parmesan cheese and fresh basil.
- This pizza can be made with rotisserie chicken or any leftover cooked chicken.
- If you want an extra layer of flavor you can top your pizza crust with a little bit of pizza sauce, bbq sauce or Alfredo sauce.
- Although fresh crisp bruschetta is what sets this pizza apart, if you prefer your bruschetta a little cooked you can place on top of the pizza and bake for 5 more minutes.
