Brioche french toast casserole comes together easily with buttery brioche bread soaked in a creamy custard, vanilla, apple pie filling with cinnamon sugar. Looks super fancy, yet the prep only takes 15 minutes.

This delicious casserole can be made same day or as an overnight french toast casserole. Your family will love this custard like dish and it can be topped with powdered sugar, maple syrup, a mix of cinnamon and sugar and even whipped cream!

  • Cut loaf in 1 inch cubes.
  • In a saucepan melt butter and brown sugar. Add brown sugar mixture to the bottom of the dish and top with pie filling.
  • Place cubed bread on top.
  • In a large bowl, whisk together eggs, milk, vanilla, cinnamon and brown sugar.

  • Pour custard mix over the cover with plastic wrap. Let it soak for an hour in your fridge. Bake as directed below.

💡Amira's Special Tips

  • If you do not want to use the pie filling, double the sugar and butter at the bottom of the dish.
  • Stale bread (a day or two old) is better for this recipe. You can cut the bread and place them on a baking sheet inside your oven overnight. Please note the oven should not be turned on!

🧺 Storage

  • Store leftover brioche french toast casserole refrigerated in an airtight container or tightly covered for up to 5-6 days.
  • Reheat in the oven or air fryer on 350°F until crisped up again.
  • You can freeze leftovers wrapped tightly with plastic wrap then foil for up to 3 months. Thaw in the fridge overnight then re-crisp them in the oven or air fryer.

⌛ Make Ahead

You can assemble the dish cover with plastic wrap and leave in the fridge overnight then bake before eating.

🍽️ Serve With

  • Brioche french toast can be served with fresh fruit or other brunch items.
  • Top with a drizzle of maple syrup just before serving.

👩‍🍳 Variations

  • Although I recommend apple pie filling, you can use any pie filling of choice.
  • Mix in some dried raisins, cranberries or any dried fruits you like.
  • Add in some lemon zest, orange zest instead of cinnamon and vanilla for a different flavor.

What does brioche bread taste like?

Brioche bread is light, sweet and buttery. It is made with an enriched dough and can be used in many savory as well as sweet dishes.

Why is my French toast casserole soggy?

Your French toast casserole may end up soggy if the bread you are using is not stale or sturdy. Fresh or thin slices of bread won't be able to absorb the egg mixture properly resulting in a soggy casserole.

What are some brioche bread substitutions?

If you don't have brioche bread in your local store, some other ideas to try would be challah bread, sweet bread or even croissants are all good options.

Equipment

  • 1 9x13 casserole dish
  • 1 small saucepan
  • 1 large bowl

Ingredients

  • 1 (17.6oz) loaf brioche bread stale bread works better
  • ¼ cup unsalted butter
  • ½ cup + 2 teaspoon packed dark brown sugar
  • 1 can (21oz) apple pie filling
  • 6 large eggs
  • 2½ cups whole milk
  • 2 teaspoon vanilla extract
  • 2 teaspoon ground cinnamon

Instructions

  • Cut loaf into 1 inch cubes and set aside.
  • Spray a 9x13 casserole with oil spray and set aside.
  • In a small saucepan add butter and brown sugar, melt over medium heat and mix well.
  • Add brown sugar mixture to the bottom of the casserole dish top with pie filling.
  • Place cubed bread on top.
  • In a large bowl, whisk together eggs, milk, vanilla, cinnamon and brown sugar.
  • Pour custard mixture over and cover with plastic wrap.
  • Let it soak for 30 minutes to 1 hour in your fridge. You can leave it overnight too.
  • Preheat your oven to 350°F.
  • Take the casserole out and remove the plastic wrap.
  • Cover loosely with foil and bake for 40 minutes in the middle of your oven.
  • Uncover and continue to cook for another 15-20 minutes or until nicely browned at the top and bubbly.
  • Sprinkle top with powdered sugar or serve slices with syrup and fresh fruits on the side.
