We love to make apple crumb cake during the fall as many apples, like Granny Smith are in season and perfect for baking. This apple cake tastes so good and makes the whole house smell amazing as it bakes.

  1. Make the crumb topping by combining the brown sugar, cinnamon and melted butter in a medium bowl and mix well.
  2. Add flour and mix until the mixture forms crumbs and holds together when pinched. Set aside.

  • In a blender combine yogurt, sugar, oil, eggs and vanilla mix until well blended.
  • In a large bowl, add flour, baking powder, salt, cinnamon and apples. Mix together well.
  • Pour the wet ingredients over the dry ingredients and mix with a spatula.
  • Spread mixture in the prepared cake pan. Add the crumb topping evenly, pressing it lightly into the batter and bake according to instructions below.

  • This cake can also be made in a square brownie type pan and cut into squares.
  • A springform pan can be used in place of a round cake pan for easy side removal.
  • You can use any apples you like, or even a combination of apples. We love using granny smith apples here.
  • A simple sugar icing can be made by mixing powdered sugar with a little milk or water until desired consistency and flavored with a touch of vanilla or lemon zest.

A fancy but very easy apple cake fragranced with cinnamon for an ultimate fall dessert. Serve plain or with caramel sauce on the side.

Ingredients

  • 1 cup oil 235ml
  • 1 cup granulated sugar 200g
  • 1 cup full fat yogurt 225g
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all purpose flour 240g
  • 2½ teaspoon baking powder
  • ¼ teaspoon salt
  • 1 teaspoon cinnamon
  • 2 medium apples peeled and shredded, 2 cups about 200g

For the crumb topping:

  • ½ cup brown sugar 65g
  • 2 teaspoon cinnamon
  • 8 Tablespoons unsalted butter melted
  • 1½ cups all-purpose flour 180g

Instructions

Make the crumb topping

  • In a bowl, combine brown sugar, cinnamon and melted butter mix well.
  • Add flour and mix until the mixture forms crumbs and holds together when pinched.
  • Set aside.

Make the cake:

  • Preheat the oven to 350°F
  • Using a large piece of parchment, cover the bottom and sides of a 10 inch round cake pan. Make sure the parchment is hanging off the sides.
  • In a blender combine yogurt, sugar, oil, eggs and vanilla mix until well blended.
  • In a large bowl, add flour, baking powder, salt, cinnamon and apples. Mix together well.
  • Pour the wet ingredients over the dry one and mix with a spatula.
  • Spread mixture in the prepared cake pan.
  • Spread crumb topping evenly, pressing it lightly into the batter.
  • Bake for 40-50 minutes.
  • Allow to cool down in the pan for 15 minutes before attempting to remove.
  • Place on a wire rack and let it cool completely for 30 minutes more.
