Fire roasted tomatoes brings out all the sweetness and goodness of tomatoes. Adding fresh herbs and garlic is incredibly satisfying and such flavor that will have you swooning. Roasting tomatoes takes only 5 minutes of prep time and less than 30 minutes in your oven.

Plump, juicy tomatoes fired in the oven enhances and elevates their flavor. These little gems can then be used in so many dishes! Throw them in your pasta, as a topping on pizza or focaccia bread. Toss them in your salads or add them to your chicken dishes. Slice them up for your sandwiches or burgers. Make fresh tomato soup, salsa or homemade pasta sauce.

Fire roasted tomatoes replaces a jar sun dried tomatoes you get in the store. However making roasted tomatoes at home not only tastes better than the store bought, but costs significantly less. Make a big batch and keep them stored in refrigerator until ready to use them.

📋 Ingredient Notes

  • Tomatoes: Plum or also known as Roma tomatoes are a great choice although any tomatoes will work for this recipe.
  • Garlic: If you love garlic mix in, if you want a lighter subtle flavor, check my recipe notes for tips on reducing the strong garlic flavor.
  • Olive oil: A must with Mediterranean cooking. Be sure to drizzle a bit on each tomato.
  • Basil & Rosemary: Fresh herbs really add so much flavor.
  • Salt and pepper: Season to taste

  • Wash and cut tomatoes lengthwise.
  • In a medium bowl combine all the ingredients except for the tomatoes and mix well.
  • Add the tomatoes and toss to combine.
  • Preheat the oven to 450° F. Place the tomatoes on a rimmed baking sheet.

  • Bake in the center of your oven for 25-30 minutes until completely done.

  • Any tomatoes will work for this recipe, plum tomatoes are the best choice as they make the most tasty sauces.
  • This recipe is excellent when you have a lot of summer tomatoes in your garden, there is a ridiculous sale on tomatoes in your area or to pump up the flavor in winter tomatoes.
  • If you do not like a strong garlic presence you can simply leave garlic cloves whole and roast them with the tomatoes, place in the jar with the tomatoes to give a faint aroma. Discard when using the tomatoes.

  • Make the on open flame, use your outdoor gas or charcoal grill for some grill flavor.

You can keep roasted tomatoes in an airtight container. Refrigerate for up to 2 weeks or freeze for up to 4-5 months.

The tomatoes will be smaller in size. The fire roasted tomatoes will be soft, the skin may burst and may be a little charred.

Ingredients

  • 2 lbs Roma tomatoes
  • 3 Tablespoons olive oil
  • 1 teaspoon salt or to taste
  • ½ teaspoon black pepper
  • 2 cloves garlic minced
  • 2 teaspoon fresh rosemary chopped
  • 1 Tablespoon fresh basil chopped

Instructions

  • Wash and cut tomatoes lengthwise.
  • In a medium bowl combine all the ingredients except for the tomatoes and mix well.

  • Preheat the oven to 450°F.

  • Place in mason jars and cover with a thin layer of oil.

    We have so many tomatoes coming from the garden right now, so I'm thrilled to see your post! Once fire-roasted, can these be safely canned or must they be refrigerated or frozen? (I've been using the USDA guideline recommendations set by the NCHFP for safe food preservation.)
