📋 Ingredient Notes

  • Ricotta cheese - I recommend that you use whole milk ricotta because it's the creamiest and will give you the best flavor.
  • Olive oil - Using high-quality, extra-virgin olive oil will give you the best flavor in your dip.
  • Lime juice - To get the most juice out of your lime, roll it around on the counter to loosen up the pulp before squeezing it. This will help you get as much juice as possible with each one.
  • Fresh cilantro - Look for fresh cilantro that is bright green and has no yellow or wilted leaves. This will ensure the best flavor in your dishes.
  • Fresh parsley - Look for parsley that is bright green with no yellow or wilted leaves.
  • Lime zest - To get the most zest out of your lemon, use a microplane grater to scrape off only the very top layer of the rind.
  • Salt - Start off with a small amount and adjust the amount to suit your tastebuds.

Creamy whipped ricotta dip is a simple recipe for a delicious dip with a smooth texture.
  • In your food processor, or using a hand mixer and a medium bowl, add ricotta, half the oil, lime juice and salt then process until light and creamy.
  • Place in a serving bowl.
  • In a small bowl, place fresh parsley, cilantro, lime zest, and the remaining half tablespoon of olive oil.
  • Spread the herb mixture on top of the dip and serve with baguette slices or your favorite crackers.

💡 Tips for Success

  • For best results, use whole milk ricotta cheese.
  • You can use lemon zest and juice if you do not have limes.
  • Use a rich, good quality extra virgin olive oil.
  • Add a dash of black pepper or some red pepper flakes to make it a bit spicier.
  • If you don't have a food processor in your kitchen, you can use a blender to whip the ricotta as well.
  • It will take a couple of minutes for the ricotta to become light and creamy, don't rush the process.
  • If you are prepping this dip ahead wait until you are ready to serve it before you add the seasoned oil and lemon juice mixture to the top.

🧺 Storage

Store leftovers in the fridge in an airtight container for up to two days. If you don't have a lid for your serving dish you can cover it tightly with plastic wrap to keep the ricotta dip fresh.

⌛ Make Ahead

Need to prep for your party early? Whip the ricotta until fluffy and then store it in the fridge for 12 - 24 hours. I like to store the remaining oil and lemon juice mixture in the fridge and then top the ricotta when I'm ready to serve it.

🍽️ Serve With

  • Serve this creamy dip alongside pita chips, crackers, or crostini. If you want to pair it with another tasty appetizer try these Bread Balls also.
  • Serve fresh vegetables.

  • Switch up the flavors of this dip by adding your favorite fresh herbs, such as garlic, fresh mint, dill, rosemary, or thyme they all work great in this creamy dish.
  • For a touch of sweetness to balance out the lemon, add a small amount of honey to the herb mixture or drizzle it on the top of ricotta.
  • Turn it into a sweet dip by using honey and orange juice in place of the lemon juice. It will have a sweet citrus flavor.

Ingredients

  • 1 cup Ricotta cheese whole milk
  • 1 Tablespoon olive oil divided
  • ½ Tablespoon lime juice freshly squeezed
  • 1 Tablespoons fresh cilantro chopped
  • 1 Tablespoon fresh parsley chopped
  • ½ teaspoon lime zest
  • Salt to taste

Instructions

  • In your food processor add ricotta, half the oil, lime and salt then process until light and creamy.
  • Place in a serving bowl.
  • In a small bowl, place fresh parsley, cilantro, lime zest and the remaining half tablespoon of olive oil.
  • Top the ricotta with the herb mixture and serve with an extra drizzle of olive oil.

Notes

  • Variations:
    You can choose any combination of fresh herbs like fresh mint, dill, rosemary, thyme..etc.
  • You can also add honey to the herb mixture or top the dish with a drizzle of honey.
    Make it sweet dip and use honey and some orange juice for a bright flavor.
  • Storage: store leftover in an airtight container in the fridge for 1-2 days.
