These Beef and Potato Tacos are a delicious twist on traditional tacos, perfect for a hearty and satisfying meal. Made with tender ground beef, flavorful potatoes, and all the classic taco toppings, these tacos are sure to become a family favorite.

📋 Ingredient Notes

  • Olive oil - Out of olive oil? Swap it out and use vegetable oil or canola oil instead.
  • Onion - White or yellow onions work best for cooking.
  • Ground beef - I like to use ground chuck, but you can use your favorite beef.
  • Taco seasoning - Use your favorite brand of seasoning or a homemade taco seasoning.
  • Salsa - Any type of salsa will work, but if you prefer a milder flavor, use a mild or medium salsa.
  • Russet potatoes - Russet potatoes are the best choice for this recipe because they hold their shape well when cooked.
  • Tortillas - You can use corn or flour tortillas whichever your family prefers for tacos.

🥄 Instructions

Note: This is an overview of the instructions. The detailed instructions are in the recipe card below.

Step by step instructions to make the tacos.
  • Fry the potatoes in a large skillet with oil until golden brown. Then drain and season.
  • Heat oil in a skillet on medium-high heat, and saute the onion until translucent. Then add the beef and cook until no longer pink. Season ground beef with taco seasoning and pour the salsa over, mix well. Mix in the fried potatoes.
  • In a hot skillet with oil, place two tortillas so half of them are on the bottom, and half are leaning on the side of the skillet. Spoon about 2 tablespoons of shredded cheese on top, and spread ¼ cup of the meat mixture on half of the tortilla, folding the other half over.
  • Fry for 1-2 minutes. Turn it over to the other side. And fry for another 2 minutes.

💡Amira's Tips

  • Russet potatoes work best for frying. However, you can also use yukon gold potatoes. I don't recommend using red potatoes because they have a higher water content.
  • When slicing your potatoes, slice them into even-sized pieces so that they cook evenly.
  • Pat dry the potatoes before adding them to the hot oil for the best crispy exterior.

🧺 Storage

Refrigerate- Store leftovers in an airtight container in the fridge for 3-4 days.

Freezing: You can freeze the leftover taco meat, however, I don't recommend freezing cooked potatoes. The texture of the potatoes will become mushy when thawed and reheated.

Reheating: To reheat your leftover taco meat, simply place it in a pan over medium heat and cook until heated through. You can also microwave it for a quick option.

⌛ Make Ahead

The best thing about this recipe is that the taco filling tastes even better the next day. So, feel free to make the taco meat and potato mixture up to 24 hours in advance and then reheat when you are ready to enjoy.

Just a note however that the potatoes will lose some of their crispy texture if you mix them with the beef. Reheat the potatoes separately in the oven or air fryer to keep them crispy.

🍽️ Serve With

  • These tacos are a delicious meal on their own. However, we like to pair them with this Rice Cooker Mexican Rice.
  • Also, you can't have Mexican food without this No Tomato Guacamole.

👩‍🍳 Variations

  • Not a fan of ground beef? Swap it out and use ground turkey or ground chicken instead.
  • Does your family love spicy food? Add red pepper flakes or extra cayenne pepper to your taco meat.
  • You can also add beans to your meat mixture. Black beans or refried beans both work well in this mixture.
  • Don't forget the toppings. Pico de Gallo, sour cream, cilantro, and lettuce all work great as toppings for these tacos.

Potatoes are sometimes as a beef extender to lower food costs, but they also are filling so they can make the tacos heartier.

Do you add taco seasoning before or after cooking ground beef?

Add the taco seasoning after you cook the ground beef. This will ensure that your meat is seasoned well.

Do you drain beef before tacos?

Yes, drain the excess grease before you add the taco seasoning to prevent greasy tacos.

Ingredients

  • 3 Tablespoons olive oil divided
  • 1 onion chopped
  • 2 pounds ground beef
  • 2 packets of Taco seasoning
  • ⅓ cup salsa
  • 1 pound russet potatoes cut into cubes
  • Oil for frying
  • 10 tortillas

Topping:

  • Pico de Gallo
  • Guacamole
  • Sour cream
  • Shredded lettuce
  • Shredded cheese

Instructions

  • Fry the potatoes until golden and crisp, take them out on a plate lined with parchment paper and season with some salt.
  • Heat half the oil in a large skillet on medium heat and sauté onion until translucent.
  • Add ground beef and cook until no longer pink, drain excess fat if necessary.
  • Season ground beef with taco and pour the salsa over, mix well.
  • Let it cook for another 2 minutes then turn heat off.
  • Mix in the fried potatoes.

Assemble Tacos:

  • In another large skillet heat the remaining oil.
  • Place two tortillas so half of it is on the bottom and half the tortilla is leaning on the side of the skillet.
  • Spoon about 2 tablespoons shredded cheese top that with ¼ cup of the meat mixture and spread it on half of the tortilla, fold the other half over.
  • Fry for 1-2 minutes. Turn it over to the other side. And fry for another 2 minutes.
  • Serve topped with lettuce, red onions, avocado slices, sour cream and any taco fixes you like.
