Chicken broccoli casserole is an easy recipe loaded with chunks of chicken, fresh broccoli, and tender potatoes in a yummy cheesy, and creamy sauce. Easily cooks in your oven, this delicious meal is great for a busy weeknight.

Chicken broccoli potato casserole is made up of simple ingredients so it's easy for to make for your family any night of the week. You can't go wrong with chicken, potatoes, broccoli with a layer of cheese and baked until the cheese is melted over the entire casserole.

Cheesy chicken casseroles are the perfect way to get your whole family to enjoy a homemade meal loaded with broccoli, potatoes, chicken and cheese. Kids will be asking for this dish again and again.

📋 Ingredient Notes & Variations

  • Chicken, I used boneless skinless chicken breasts. You can use chicken thighs or even cooked chicken.
  • Potatoes of any kind will work. I used russet potatoes but you can even use red potatoes if this is all you have.
  • Fresh broccoli.
  • Cream of chicken soup, buy it from your grocery store or make a homemade cream of chicken soup.
  • Garlic cloves: although I like using fresh minced garlic, you can also use garlic powder.
  • Chicken broth and sour cream for a delicious creamy sauce.
  • Olive oil
  • Oregano: You can also use Italian seasoning. If you do not have any, check out this post for the best oregano substitutes.
  • Salt and black pepper

🥄 Instructions

  1. In a large mixing bowl, mix chicken, potatoes, broccoli, olive oil, garlic, oregano, salt and pepper. Spray a casserole dish with cooking spray and set aside.
  2. Pour cream of chicken soup, sour cream, chicken broth over and mix well.
  3. Spread the mixture in the prepared baking dish, sprinkle cheese on top, cover with aluminum foil, and bake for 25 minutes.
  4. Uncover and continue to bake for another 20-25 minutes until cheese melts and browned to your liking.

💡Amira's Tips

  • You can peel the potatoes like I did, before adding them into the mixture.
  • For a healthier casserole use our Cream of Chicken Soup Substitute recipe.
  • Top with a sprinkle of red pepper flakes, chopped green onions before serving for a touch of heat.
  • You may want to use clean or gloved hands to mix everything together in the bowl.

👩‍🍳 Variations

  • A sprinkle of bacon adds a nice flavor if you choose.
  • You can use another variety of shredded cheese if you prefer, such as Monterey jack or mozzarella.
  • Scalloped boxed potatoes can be used in place of fresh potatoes.
  • Add a package of ranch seasoning for another level of deliciousness.
  • This is a great recipe to use rotisserie chicken instead of raw chicken. Shred or dice the chicken and mix it in with everything and follow the recipe as directed.

🧺 Storage

Store leftover chicken broccoli potato casserole in an airtight container and refrigerate for up to 4 days.

⌛ Make Ahead

Make chicken broccoli casserole ahead of time by cubing up the chicken, cutting the broccoli into smaller florets, and peeling and prepping the potatoes. You can even mix everything up, spread into your casserole dish and store in your refrigerator until your ready to bake.

🍽️ Serve With

  • Although this is a complete meal by itself but this Chicken potato broccoli casserole pairs well with a side salad, garlic bread or an extra side of veggies.

💬 FAQs

Can I use already cooked chicken in this casserole recipe?

Uncooked chicken is preferred in this recipe and will cook perfectly with the potatoes and fresh broccoli. If you use already cooked chicken, it may end up overcooked and dry.

Equipment

  • 1 13x9 casserole dish
  • 1 large bowl

Ingredients

  • 1 pound boneless skinless chicken breast cut into cubes
  • 1 pound potatoes cut into bite sized chunks
  • 1 head broccoli cut into 2-3 bites
  • 2 garlic cloves minced
  • 2 Tablespoons olive oil
  • 1 teaspoon dry oregano
  • Salt and pepper to taste
  • 1 cream of chicken soup 10.5 ounce can
  • ½ cup sour cream
  • ¼ cup chicken broth
  • 2 cups cheddar cheese

Instructions

  • Preheat oven to 375°F. Spray a 13x9 casserole with cooking oil and set aside.
  • In a large bowl mix chicken, potatoes, broccoli, olive oil, garlic, oregano, salt and pepper.
  • Pour cream of chicken soup, sour cream, chicken broth over and mix well.
  • Spread mixture in the casserole dish, sprinkle cheese on top, cover and bake for 25 minutes.
  • Uncover and continue to bake for another 20-25 minutes until cheese melts and browned to your liking.
