Chicken broccoli casserole is an easy recipe loaded with chunks of chicken, fresh broccoli, and tender potatoes in a cheesy, creamy sauce. Easily cooked in your oven, this delicious meal is great for a busy weeknight.

Of all the weeknight recipes in my rotation, this Chicken Broccoli Potato Casserole is the one I come back to most. For me, it’s the perfect combo: comforting, incredibly easy, and a complete meal all in one pan.

What I truly love is how little fuss it requires. It feels like a “throw and bake” kind of meal—just toss together chunks of chicken, potatoes, and broccoli, give it a creamy, cheesy blanket, and let the oven do the rest. On busy nights, knowing that the protein, vegetables, and carbs are all cooking together in one pan means I can step away to do other stuff that needs attention.


The moment it comes out of the oven, bubbling with melted cheese over the tender chicken and veggies, my whole family gathers around. It’s the kind of hearty, kid friendly dish that everyone actually looks forward to, and I love that I can even assemble it ahead of time and just pop it in the oven when we’re ready.

Chicken Broccoli Potato Casserole

- 1 13x9 casserole dish
- 1 large bowl
Ingredients
- 1 pound boneless skinless chicken breast cut into cubes
- 1 pound potatoes cut into bite sized chunks
- 1 head broccoli cut into 2-3 bites
- 2 garlic cloves minced
- 2 Tablespoons olive oil
- 1 teaspoon dry oregano
- Salt and pepper to taste
- 1 cream of chicken soup or use 10.5 ounce can
- ½ cup sour cream
- ¼ cup chicken broth
- 2 cups cheddar cheese
Instructions
- Preheat oven to 375°F. Spray a 13x9 casserole with cooking oil and set aside.
- In a large bowl mix chicken, potatoes, broccoli, olive oil, garlic, oregano, salt and pepper.
- Pour cream of chicken soup, sour cream, chicken broth over and mix well.
- Spread mixture in the casserole dish, sprinkle cheese on top, cover and bake for 25 minutes.
- Uncover and continue to bake for another 20-25 minutes until cheese melts and browned to your liking.
Notes
- If you do not have oregano, check these oregano substitutes.
- You can peel the potatoes like I did, before adding them into the mixture.

How to make Chicken Broccoli Casserole
- In a large mixing bowl, mix chicken, potatoes, broccoli, olive oil, garlic, oregano, salt and pepper. Spray a casserole dish with cooking spray and set aside.
- Pour cream of chicken soup, sour cream, chicken broth over and mix well.
- Spread the mixture in the prepared baking dish, sprinkle cheese on top, cover with aluminum foil, and bake for 25 minutes.
- Uncover and continue to bake for another 20-25 minutes until cheese melts and browned to your liking.

You can. I prefer uncooked chicken for this recipe as it will cook perfectly with the potatoes and broccoli. If you use already cooked chicken, it may end up overcooked and dry. To avoid that, increase the amount of sauce.
Place cooled leftovers in an artight container and refrigerate for 3-4 days. Reheat in the microwave or covered in the oven until thoroughly heated.
A sprinkle of bacon adds a nice flavor if you choose. You can use another variety of shredded cheese, such as Monterey Jack or mozzarella. Add a package of ranch seasoning for another level of deliciousness.
Make chicken broccoli casserole ahead of time by cubing up the chicken, cutting the broccoli into smaller florets, and peeling and prepping the potatoes. You can even mix everything up, spread into your casserole dish, and store in your refrigerator until you're ready to bake.
