This Chicken Spaghetti with Rotel dinner is the ultimate weeknight comfort food. Spaghetti cooks right into the creamy, cheesy sauce with Rotel tomatoes and green chiles. It gets topped with more cheddar cheese for a bubbly cheesy finish. It's a true one pot meal and a delicious way to use leftover chicken.

RoTel Chicken Spaghetti


I love this chicken spaghetti recipe not only because my family likes it but also for the one pot idea. You do not need to boil the pasta separately and this helps keep cleanup to an absolute minimum.

This is also a brilliant recipe to turn leftover cooked chicken into a rich, creamy comfort dish with basic kitchen staples. Plus, it's wonderfully versatile: you can easily prep it ahead of time or freeze it for those extra busy evenings when you need a hot, homemade dinner ready to go.

Pro Tip

Make sure the spaghetti is mostly submerged in the liquid when you add it. Stir several times while it cooks so the noodles don't stick together or cook unevenly.

Chicken Spaghetti with RoTel

A great busy day meal, freezer meal that works wonderful with any leftover chicken you have at home. Tender pasta and chicken in creamy delicious sauce, a kid and adult favorite.

Equipment

  • deep skillet
  • 13x9 baking dish (optional)

Ingredients

  • 2 cans cream of chicken soup 10.5 ounce each
  • 1 can RoTel tomatoes with green chiles 10 ounces, undrained
  • 1 cup milk
  • 3 cups hot water
  • 8 oz cream cheese
  • 2 teaspoon Italian seasoning
  • 4 cups cooked chicken diced or shredded
  • 16 oz spaghetti noodles broken in half
  • 2-3 cups cheddar cheese

Instructions

  • Preheat oven to 350°F.
  • In a deep skillet add chicken soup, RoTel, milk, hot water, cream cheese and Italian seasoning.
  • Turn the heat on medium-high and whisk everything together.
  • When it starts to boil, add spaghetti and press with the back of a spoon to cover with the liquids.
  • Cover and let it cook on medium for 15 minutes.
  • Uncover and stir the spaghetti with a spoon to break them apart so they will no longer stick together.
  • Stir in chicken, cover and continue to cook for 5 more minutes.
  • Uncover, give it another quick stir.
  • If your pan goes in the oven then sprinkle cheese on top and pop it in for 5-10 minutes until the cheese melts.
  • If not, then spray a 13x9 oven dish with cooking oil and pour the spaghetti chicken mixture in. Sprinkle top with cheese and place in the oven until cheese melts.

Notes

  •  If you do not want to use canned cream of chicken, use homemade Alfredo sauce and substitute boiling chicken broth for the boiling water.
  • If you do not want to used canned RoTel or do not have it where you live, add ¼ cup finely diced green pepper and ½ cup of diced tomatoes.
  • You can also use a can of diced tomatoes in place of the RoTel with chilies. 
  • You can use mozzarella cheese instead of cheddar cheese.

How to make Chicken Spaghetti Rotel

  1. Preheat the oven to 350°F. In a deep skillet add chicken soup, RoTel, milk, hot water, cream cheese and Italian seasoning.
  2. Turn heat on medium high and whisk everything together.
  3. When it starts to boil, add in spaghetti.
  4. Cover and let it cook for 15 minutes.
  1. Uncover and stir the spaghetti with a spoon to break them apart and keep them from sticking together.
  2. Stir in chicken, and continue to cook for 5 more minutes until the pasta is cooked al dente.
  1. If your skillet is oven safe, then sprinkle cheese on top and pop in the oven for 5-10 minutes until the cheese melts.
  2. If not then spray a 13x9 casserole dish with cooking oil and pour the spaghetti chicken mixture in. Sprinkle with cheese and place in the oven until the cheese melts.

Easy Variations

  • Switch out the chicken for turkey or even ground beef.
  • Add diced bell peppers or another favorite veggie.
  • Swap out the cheddar for the one you like best like Mozzarella, Monterey Jack or Velveeta.
  • Leave the chicken out to go with a meatless meal.

My notes

  • If you do not want to use canned RoTel or do not have it where you live, add ¼ cup finely diced green pepper and ½ cup finely diced tomatoes.
  • You can also use a can of diced tomatoes in place of the RoTel with chilies.
  • You can use mozzarella cheese instead of cheddar cheese.
  • Use your favorite pasta, I find spaghetti or linguine are the best choices as it holds the cheesy sauce with each bite.

FAQs

Can I make this without baking?

Yes. Once the spaghetti is cooked and the chicken is stirred in, you can add the cheese, cover the skillet and let it melt without transferring the dish to the oven. The oven simply gives you a more bubbly, golden cheese topping.

What can I serve with this casserole?

I’d strongly urge you to add a side of greens like Air Fryer Frozen Broccoli, Frozen Asparagus, or Mediterranean Roasted Vegetables.
Then if you’re going all out, add a side of Air Fryer Garlic Bread, or if you want to blow the comfort food meter, add a side of Garlic Bread Pizza.

How to store and reheat chicken spaghetti?

Place cooled leftover chicken spaghetti in an airtight container and refrigerate for 3-4 days.
To reheat: Thaw the casserole, if frozen, in the fridge overnight, then remove the plastic wrap. Cover with foil and reheat in a 350°F oven until heated thoroughly and bubbly. Individual portions can be reheated in the microwave.

Can I freeze chicken spaghetti?

Yes! The key to freezing chicken spaghetti is to pour it into a casserole dish, let it cool completely and then wrap it tightly. Store in your freezer for up to 3 months.

Can I make this casserole ahead?

Chicken spaghetti with RoTel is the perfect make-ahead meal. Make the casserole up until the point where you put it in the oven. Wrap tightly and refrigerate until you're ready to reheat and serve.

What other variations can I make?

Switch out the chicken for turkey or even ground beef. Add diced bell peppers or another favorite veggie. Swap out the cheddar for the one you like best like Mozzarella, Monterey Jack or Velveeta. Leave the chicken out for a meatless meal.
