  • Butter: because everything is better with butter. Used to cook the chicken in the skillet.
  • Garlic cloves: adds amazing flavor to the chicken bake.
  • Chicken breast: recipe calls for uncooked chicken but using leftover or rotisserie chicken is a great shortcut.
  • Oregano: adds bold flavor to the dish.
  • Italian seasoning: a blend of Italian seasons perfect for pasta and chicken dishes.
  • Salt and Pepper: brings out flavor.
  • Sun dried tomato: softens as it cooks and as tremendous flavor to the dish.
  • Fresh spinach: an easy way to get veggies into picky eaters and it tastes amazing.
  • Pasta: I used penne pasta, but you can use your favorite or even change it up with gluten-free pasta.
  • Alfredo sauce: a cheesy white sauce available in jars or make it homemade.
  • Boiling water: use to cook the pasta when it's in the oven.
  • Mozzarella cheese: cheesy pasta is a must and it melts into the entire dish.

  1. Preheat oven to 400°F. In a medium bowl, combine chicken, garlic, Italian seasoning, oregano, salt and pepper. Toss to season chicken well.
  2. In a deep skillet over medium heat, melt butter then add chicken and cook for 7-8 minutes until cooked all the way through.
  3. Turn heat off and add all the other ingredients except for the mozzarella cheese and mix well.
  4. Cover the pan and cook for 30 minutes in the oven or until pasta is cooked.

  1. Take it out of the oven and then sprinkle mozzarella cheese on top. Bake for another 5-10 minutes or until the cheese melts and gets bubbly.

  • This is a great recipe to use leftover chicken, rotisserie chicken or any cooked chicken you have on hand.
  • Use any pasta of choice.
  • Serve with about ½ cup parmesan cheese on the side for anyone who like it.
  • My family loves this recipe with homemade Alfredo sauce but you can use store-bought as well.

  • Substitute part of the boiling water with heavy cream or chicken broth for extra richness.

  • 1 Medium bowl
  • 1 Oven safe deep skillet

Ingredients

  • 2 Tablespoons butter
  • 1 clove garlic minced
  • 1 pound boneless skinless chicken breasts cut into cubes
  • 1 teaspoon oregano
  • 1 teaspoon Italian seasoning
  • ½ teaspoon salt or to taste
  • ¼ teaspoon black pepper
  • ¼ cup sun dried tomato drained and chopped
  • 3 cups baby spinach
  • 8 oz penne pasta uncooked
  • 1 jar Alfredo sauce 15oz
  • 2 cups boiling water
  • 1 ½ cups mozzarella cheese
  • Basil or parsley for garnish optional

Instructions

  • Preheat your oven to 400°F.
  • In a medium bowl, combine chicken, garlic, Italian seasonings, oregano, salt and pepper. Toss well to combine.

  • In a deep skillet that goes into the oven, melt butter then add chicken and cook for 7-8 minutes until cooked all the way through.

  • Take it out of the oven and then sprinkle mozzarella cheese on top.

    I ended up making it all on the stove-top. I cooked my pasta separately and added it in at the end (obviously I didn't use the 2 cups of water). I also using 1/2 cup of sun dried tomatoes and 4 cups of spinach. Thanks for the recipe Amira.

    I made to recipe- but substituted Italian sausage and added the spices to the mixture. I didn’t have any garlic so substituted garlic powder…. So good! Definitely a keeper. Thank you.

    Tuscan chicken says that the boiling water is added to cook the pasta but there is no amount of water in the ingredients?

      After chicken Is cooked, it states to turn oven off. Is the oven off for the next steps?

        Charlotte, you cook the chicken on stove top then turn stove heat off. You'll put the skillet in the oven to finish cooking. I hope this helps.

    I don't have a skillet that can go into the oven. Could I just continue the cooking on top of the stove? Or should I put it into a casserole dish and then into the oven?

            So once you turn the oven off (in step 2) you don't need to turn it on again? It seems like the boiling water will not be able to cook the pasta if the oven is off. And will there be enough heat still to melt the mozzarella? Just making sure!?!
