This is the perfect busy weeknight meal. Make it ahead of time and heat it up when needed or easily throw it together and dinner is ready in less than an hour. Swap out or add more veggies. - Butter: because everything is better with butter. Used to cook the chicken in the skillet. You can also use olive oil.
- Garlic cloves: adds amazing flavor to the chicken bake.
- Chicken breast: recipe calls for uncooked chicken, but using leftover or rotisserie chicken is a great shortcut. You can also use chicken thighs cut into bite-sized pieces.
- Oregano: adds bold flavor to the dish. Check out our most favorite Oregano substitutes if you do not have it.
- Italian seasoning: a blend of Italian seasons perfect for pasta and chicken dishes.
- Salt and Pepper: brings out flavor.
- Sundried tomatoes: softens as it cooks and as tremendous flavor to the dish.
- Fresh spinach: an easy way to get veggies into picky eaters and it tastes amazing. I've used fresh baby spinach.
- Pasta: I used penne pasta, but you can use your favorite or even change it up with gluten-free pasta.
- Alfredo sauce: a cheesy white sauce available in jars or homemade. This recipe for Alfredo Sauce without Cream saves you some calories.
- Boiling water: use to cook the pasta when it's in the oven.
- Mozzarella cheese: cheesy pasta is a must and it melts into the entire dish.

Step by step: instructions

- Preheat oven to 400°F. In a medium bowl, combine chicken, garlic, Italian seasoning, oregano, salt and pepper. Toss to season chicken well.
- In a large skillet over medium-high heat, melt butter then add chicken and cook for 3-5 minutes each side until cooked all the way through.
- Turn heat off and add all the other ingredients except for the mozzarella cheese and mix well.
- Cover the pan and cook for 30 minutes in the oven or until pasta is cooked.
- Take it out of the oven and then sprinkle mozzarella cheese on top. Bake for another 5-10 minutes or until the cheese melts and gets bubbly.

Instructions
- Preheat your oven to 400°F.

Cook Chicken
- In a deep skillet that goes into the oven, melt butter on medium heat then add chicken and cook for 7-10 minutes until cooked all the way through.

I ended up making it all on the stove-top. I cooked my pasta separately and added it in at the end (obviously I didn't use the 2 cups of water). I also using 1/2 cup of sun dried tomatoes and 4 cups of spinach. Thanks for the recipe Amira.

So once you turn the oven off (in step 2) you don't need to turn it on again? It seems like the boiling water will not be able to cook the pasta if the oven is off. And will there be enough heat still to melt the mozzarella? Just making sure!?!
