📋 Ingredient Notes

  • Cream cheese - Full-fat cream cheese will give you the best taste but lower fat will also work.
  • Mayonnaise - Miracle Whip or even plain Greek yogurt can also be used.
  • Fresh dill - Fresh dill will give these sandwiches the best flavor.
  • Salt - I like to use kosher salt, but any salt will work.
  • English cucumber - English cucumbers are the best choice because they have fewer seeds and a thinner skin.
    Bread - Choose your favorite bread, I like to use white for the best old-fashioned sandwich.

🥄 Instructions

  1. Combine the cream cheese, mayo, dill, and a pinch of salt in a small bowl.
  2. Slice the cucumber into thin slices, then pat dry with paper towels.
  3. Spread the cheese mixture evenly on the bread. Layer cucumber slices on four bread slices.
  4. Top each with another slice of bread with the cream cheese mixture facing down. Using a serrated knife, cut the brown crust. Cut each sandwich in half and serve.

💡 Amira's Tips

  • I prefer to use a mandolin to get even and very thin cucumber slices. If you don't have one use a sharp knife. 
  • Use room-temperature cream cheese or whipped cream cheese so that the mixture will spread evenly. 
  • You don't have to use white bread, feel free to use any type of bread that you enjoy. 

🧺 Storage

​Store sandwiches in the fridge covered with plastic wrap or in an airtight container until ready to serve. Or for up to two days. 

⌛ Make Ahead

​These sandwiches are best made fresh. However, if you want to save a little prep time, feel free to mix up the cream cheese mixture, slice the cucumbers, and store them in the fridge until you are ready to assemble the sandwiches. 

🍽️ Serve With

​When I am serving these sandwiches for lunch or a meal, I like to pair them with a salad like this Chicken Macaroni Salad or White Bean Salad.

👩‍🍳 Variations

  • ​Add a sprinkle or dash of black pepper on top of the cucumber slices for a little extra flavor.
  • You can also add your favorite fresh herbs to the cream cheese mixture to change up the flavor. 
  • Can't find English cucumbers? Regular cucumbers will also work well for this recipe.
  • Try using homemade ranch dressing mix or a teaspoon of Hidden Valley Ranch Powder to take these sandwiches to the next level.

​The best way to keep the sandwiches from soggy is to make them immediately before serving. And, make sure that you dry the cucumbers well.

For sandwiches, you need to slice the cucumbers thinly.

Ingredients

  • 4 Tablespoons cream cheese 60g room temperature
  • 4 teaspoons mayonnaise 20g
  • 2 Tablespoons fresh dill 2g chopped
  • A pinch of salt
  • 1 English cucumber
  • 8 slices of white bread

Instructions

  • In a small bowl combine, cream cheese, mayonnaise, dill and a pinch of salt.
  • Thinly slice the cucumber with a sharp knife or mandolin. Pat dry with paper towels.
  • Spread cream cheese mixture equally on bread slices.
  • Layer cucumber on 4 bread slices.
  • Top each with another slice of bread with the cream cheese mixture facing down.
  • Using a serrated knife cut the brown crust.
  • Cut each sandwich in half and serve.

Notes

If you forgot to soften your cream cheese place them with the rest of the spread ingredients in a mini food processor or using an electric beaters.

    Hi Amira,
    First, thank you for your commitment to providing real, human tested recipes (I read your sweet post yesterday about AI generated content recipes). Second, thank you again for another delicious, simple recipe. Today I made this recipe for cucumber dill sandwiches for my lunch and am delighted at this simple, fast and nutritious recipe! Since I am salt sensitive I decided swap out any salt or cream cheese (just used Mexican mayonesa) and added extra dill as well as finely chopped celery, sweet onion and a dash of cilantro for extra flavor on top of some homemade Japanese milk bread. It came together really well, thank you again for another amazing recipe! I will send you a pic.
