Now that garden season is in full swing, you may be wondering how to store fresh tomatoes to help them last longer.  Here are some tips to help you preserve your tomatoes and enjoy them throughout the week.

  • Fresh tomatoes have a beautiful vibrant color and are packed full of sweet juicy flavor. 
  • They are great for salads, homemade sauces, or making sandwiches with them. 
  • They are also super easy to grow, so even beginner gardeners can grow them. 

I always look forward to summer when fresh tomatoes are plentiful. I can taste the delicious difference between store-bought and homegrown tomatoes just thinking about it. For me, homegrown is so much better.

🍅How to Choose Ripe Tomatoes 

To choose perfect fully ripe tomatoes, you'll want to consider several factors. No matter if you are picking a tomato fresh from your garden, at your local farmers market, or from a bin at your local grocery store these tips will help.

First, ripe tomatoes will have a deep, consistent color across the entire tomato. Also, ripe tomatoes should be firm but yield slightly to gentle pressure, indicating they are not overripe or under-ripe.

Take a moment to smell the tomato near the stem; a strong, sweet fragrance is a good indicator of ripeness.

You can spot a rotten tomato by looking for any black or moldy spots. It can also be squishy, so make sure to give your tomatoes a gentle squeeze. 

Best Ways to Store Fresh Tomatoes

How you store your tomatoes will depend on their ripeness. Here are some guidelines for different stages of ripeness:

Storing Under-Ripe Tomatoes

  • Place underripe tomatoes in a brown paper bag or a cardboard box, keeping them at room temperature and out of direct sunlight. This environment will encourage them to ripen gradually.
  • Check them daily and transfer them to the refrigerator once they achieve the desired ripeness to prolong their shelf life.

Storing Ripe Tomatoes

  • Ripe tomatoes can be stored at room temperature if you plan to consume them within a day or two.
  • For longer storage, place them in the refrigerator however, bring them back to room temperature before eating to restore some of their original flavor and texture.
  • Never store fresh produce like tomatoes in plastic bags as this can cause them to rot quickly. 

How To Store Cut Tomatoes 

  • If you have leftover cut tomatoes, store them in an airtight container in the refrigerator.
  • Use cut tomatoes within one to two days for the best flavor and quality.
  • Placing a piece of plastic wrap directly on the cut surface can help minimize moisture loss and prevent the tomato from drying out.

How To Speed Up The Ripening Process

If you need to speed up the ripening process for your tomatoes, there are a few simple methods you can use:

Fresh tomatoes in a brown bag.
  • Place your under-ripe tomatoes in a paper bag alongside a ripe banana or apple. These fruits release ethylene gas, which helps accelerate the ripening process. 
  • Store the tomatoes in a warm location, but make sure it's still out of direct sunlight. Warmer temperatures can help hasten the ripening process.
  • Covering the tomatoes with a cloth can also trap ethylene gases released by the tomatoes themselves, speeding up their ripening.

Remember to monitor your tomatoes regularly to catch them at their peak ripeness before they become overripe.

Yes, small tomatoes like grape tomatoes or cherry tomatoes can be stored in the fridge to help prolong their freshness. However, it is important to keep them in a cool and dry place, as too much moisture can cause them to go bad quickly.

What is the best way to use up overripe tomatoes?

When I have an abundance of overripe or even ripe tomatoes I like to use them to make homemade tomato sauce. It's great to freeze for an easy meal on a busy day.
