This creamy apple pudding is like biting into the perfect fall crisp afternoon. Not too overwhelming with apples and having the perfect balance between summer and fall.

- In a heavy sauce pan, add the diced apples, cinnamon, sugar and water. Let it cook on medium heat. While the apples are cooking, let's make the milk pudding layer.
- In another sauce pan over medium-low heat, pour 2 and half cups of milk add the sugar and dissolve.
- dissolve cornstarch in a cup with the remaining milk.
- Pour cornstarch mixture to the milk in the pan and keep stirring on low flame until it thickens.
- Divide the milk mixture into 6 desserts bowls or cups.
- When apples are done, Use a hand blender or a fork to mash the apples completely until smooth paste forms.
- Pour 1 cup of milk over and return to heat.
- Dissolve cornstarch in the remaining half cup of cold milk and pour over the mixture in the pan. Stir until thickens.
- Pour apple pudding mixture over the milk pudding in the 6 dessert bowls.

Use any apple or apple varieties you like. I prefer red delicious as it is sweet. You can omit the sugar from the apple layer it is to your taste. Make it vegan and use non dairy milk. Chill in the fridge if you want it cold, eat warm in cold days or just enjoy it in room temperature. Use other fruits instead of apples, pears are great in this recipe too. You can alternate milk and apple pudding layers to make more layers instead of just two.

Milk and Apple Pudding
Ingredients
For the Apple pudding layer
- 2 apples peeled and sliced
- 2 Tablespoons sugar more or less depending on your taste
- ½ teaspoon ground cinnamon optional
- ¼ cup water enough to cook the apples
- 1 ½ cup milk
- 2 ½ Tablespoons cornstarch
For the Milk layer
- 3 cups milk
- 4 Tablespoons granulated sugar or to taste
- 4 ½ Tablespoons cornstarch
- 1 teaspoon vanilla extract

To make the apple layer

- Pour apple pudding mixture over the milk pudding in the 6 dessert bowls.
- Garnish with some nuts, raisins, coconut flakes or cinnamon powder.
- Serve chilled, warm or room temperature.

👩🏫 My Experience
Fall is the most wonderful season in Colorado, colorful trees, crisp air and.. lots and lots of apples. In Egypt though, Fall meant school starting with the smell of guava and raw unripe dates- like the Barhi dates or those red crunchy sweet dates- fill the air, so it is no wonder I did not like Fall back then and I did not share mom her love for guava or red dates :).
Apple is a summer fruit in Egypt not a Fall one so this dessert is usually eaten chilled from the fridge but for our convenience and due to the fact that temperatures started to drop- some days dramatically- here in Colorado, we've enjoyed it at room temperature, but between me and you I like it warm or even hot straight from the stove but watch out for your tongue :).
