- In a small saucepan over medium heat, add water and white sugar together.
- Stir to dissolve sugar a bit and wait for the mixture to come to a boil.
- When mixture comes to a boil add in the chopped mint leaves. Bring the mixture back to a boil, then reduce heat and cover. Let it simmer for 10 minutes.
- Let the mixture cool down completely then blend.
- Pour the mixture through a fine sieve lined with cheesecloth back into your pot.
- Add lime juice and green color if you like.
- Simmer for 10 more minutes skimming any foam that gets to the surface.
- Turn heat off and let it cool down then pour into glass containers.
💡 Tips
- When using the mint leaves, it is not necessary to pull the leaves from the stems before mixing in the simple syrup. Just a rough chop is all that is needed.
- The hint of lime and green food coloring is optional.

- Store in the refrigerator for up to 1 month.
- You can pour into ice cube trays and store in the freezer for 3-4 months. Then when you need one, just pop it out of the tray and add it to your cold drink or let it defrost and melt before adding it to your recipe.

Well, of course you can! However, have you ever put in a spoonful of granulated sugar into a drink and found the sugar crystals floating around and then just sink to the bottom? Me too. Melting the sugar and water into a syrup and adding the fresh mint makes it a better flavor which seamlessly blends into drinks, ice cream, baked goods, etc.
They both add flavoring, but mint simple syrup is usually thicker and sweeter whereas mint extract tends to be thinner and certainly not sweet. Some say even a tad bitter. Simple syrup would be great in whipped cream or frosting and extracts would be more welcomed in the cake batter. Syrup is sweet, extracts are not. Extracts should be used to enhance the flavor without adding sweetness.
