Smoked queso has been a family favorite cheese dip lately. It needs just 5-minutes to prep and comes out really bold, full of flavor and smoky.

Smoked queso recipe is a great dip with delicious smoky flavor.
  • Prepare your wood chips and placed on the grill. In a disposable aluminum pan place all ingredients along with only ½ cup of milk. Place on a preheated grill on 200-220 and close the lid.
  • Stir every 20 minutes so the cheese won't burn. Keep it on the grill for few hours for more smoky flavor.

💡 Tips

  • For more smoky flavor cook for several hours on low.
  • For our taste a ½ cup of milk was enough but it is more on the thicker side, so adjust to your own preference.
  • If it is done and you still have time until you serve it place in a slow cooker to transfer to a preheated oven (the lowest heat possible) and keep it there until you are ready to serve.
  • You can use a smoker, gas grill or charcoal grill to make this dip.

🍽️ Serve With

  • Serve this dip with tortilla chips, homemade doritos, veggie sticks and more.
  • These Chocolate Chip Blondies are a perfect party dessert and the flavor goes great with any meal you've planned.

👩‍🍳 Variations

  • Use ground chicken, turkey, breakfast sausage or leave the meat out.
  • Add cooked taco meat for a taco style dip.
  • Add in some drained canned beans.
  • Adjust the jalapeño according to your liking, this tend to be a bit spicy.
  • You can use sliced pickled jalapeño or fresh instead of diced.
  • Use chopped fresh tomatoes instead of Rotel.
  • Make it a three cheese dip and add in a block of cream cheese or some monterey jack cheese.
  • Use different types of cheese, cheddar cheese, Gouda cheese and pepper jack cheese are among our favorites.

Smoked Queso Dip

Perfect cheese dip for a cookout, Cinco de Mayo, tailgating, or game days. Easy, dump and cook dip that is super easy to make.

Ingredients

  • 1 lb browned ground beef crumbled
  • 2 lb velveeta cheese cut into cubes
  • 1 8oz shredded Mexican cheese blend
  • 2 10oz cans Rotel , do not drain
  • ½ cup pickled jalapeño diced
  • 2 Tablespoons garlic minced
  • 1 cup milk divided
  • 3 cups hickory wood chips.

Instructions

  • In a large bowl soak wood chips for 30 minutes.
  • Drain then add to your smoker box, place box in the grill and turn grill on.
  • In a disposable aluminum pan place all ingredients along with only ½ cup of milk.
  • When ready lower heat to 220-240 and place the aluminum pan inside the grill, close the lid.
  • Check after 15-20 minutes and stir ingredients together so the cheese will not burn.
  • Cook for about 1 hour stirring and checking every 15 minutes.
  • Add more milk until you reach the desired consistency.
  • Serve with chips and veggie sticks.

    I was wondering if you have a copycat recipe for Ziyad’s hot and spicy humus. My husband loves it and it is really hard two find and expensive if I find it!
