Grilling is always a good idea at my home, whether we are actually firing up the grill or getting those gorgeous grill marks on the stovetop. And my family is always excited to try new flavors for grilled chicken.
This chicken recipe hits every single flavor note; it is sweet, smoky, tangy, and deeply savory, and all this comes together with budget friendly ingredients. These are the flavors that you get at a gourmet BBQ joint.

While 30 minutes gives great flavor, letting this sit in the fridge for 4 to 6 hours is the sweet spot. The acid in the lemon juice will tenderize the meat, and the spices will penetrate deep into the chicken.

Soy Sauce Chicken thighs
Ingredients
- 2 pounds boneless skinless chicken thighs ($5.60)
- 3 Tablespoons soy sauce ($0.15)
- 2 Tablespoons oil ($0.72)
- 1 Tablespoon honey ($0.17)
- Juice of a large lemon ($0.7)
- ยฝ teaspoon salt or to your liking ($.015)
- ยฝ teaspoon ground black pepper ($.08)
- ยฝ teaspoon garlic powder ($.05)
- ยฝ teaspoon onion powder ($.05)
- ยฝ teaspoon paprika ($.05)
- ยฝ teaspoon allspice ($.05)
Instructions
- Mix all the ingredients well with the chicken and let it marinate for about 30 minutes up to 24 hours.
- Cook on an an outdoor/indoor grill until thoroughly cooked.
- Or heat 2 teaspoons of oil in a large skillet on medium heat.
- Cook the chicken for 4- 6 minutes per side until nicely charred or the internal temperature reaches 165ยฐF to 175ยฐF (75ยฐC to 80ยฐC) when measured with a meat thermometer. Check out the notes below for other cooking directions.
Notes
- Outdoor Grill:
- When ready to cook, heat an outdoor grill on medium-high heat (around 400ยฐF /200ยฐC). Scrape the grill grates clean if needed and oil well.
- Remove the chicken from the marinade and let any excess drip off. Place on the grill smooth-side down in a single layer,
- Cover and cook Grill the thighs for about 4โ6 minutes per side.
- Skillet/Grilling Pan:
- Heat 2 teaspoons of oil in a large pan or grilling pan.
- Add chicken thighs in a single layer, smooth side down.
- Cook for 5-6 minutes or until you can easily flip over the chicken. Flip and cook for 6 to 7 more minutes or until no longer pink.
- Air Fryer Method:
- Preheat your air fryer to 380ยฐF/195ยฐC.
- Place the chicken thighs in the basket in a single layer smooth side down(do not overlap).
- Air fry for 10 minutes, flip to the other side and air fry for another 5-6 minutes or until fully cooked.

How to Make Soy Sauce Chicken
1- In a large bowl or a zip-top bag, combine all the marinade ingredients. Add the chicken thighs and toss until they are completely coated.

2- Before you cook, let the chicken sit at room temperature for about 10โ15 minutes so it cooks evenly. Grill on an outdoor grill, skillet, or griddle as directed in the recipe card.

Yes! However, chicken breasts dry out much faster than thighs. Reduce the cooking time by a minute or two per side, and ensure you cook them exactly to 165ยฐF.
As written, it contains standard soy sauce, which features wheat. To make it 100% gluten-free, simply swap the soy sauce for Tamari or coconut aminos.
