I've seen packages of corned beef in stores for years now but never dared to approach!! May be, this is due to my deep childhood love for the canned corned beef we are used to have in Egypt, that I did not want to try any other corned beef!

- Corned beef brisket, it is sold in stores brined with spice packet.
- Water or beef broth, this homemade Instant Pot beef bone broth is incridible.
- Vegetables, like carrots, onions and potatoes.

- Place onions on the bottom of your slow cooker, then put the corned beef brisket on top.
- Sprinkle spices from the packet that came with your corned beef over.
- Pour tap water over, cover and cook on low for 8-9 hours.
- Add potatoes and carrots halfway through cooking.
- If you are adding cabbage, add it in the last hour.
🧺 Storage
Refrigerate - Put leftover slow cooker corned beef in an airtight container and refrigerate for 5-6 days.
Freeze - You can also freeze leftover for 3 months. Thaw in fridge overnight before using.

Slow Cooker Corned Beef Without Cabbage
Ingredients
- 1 large onion peeled and cut into chunks.
- 4 lb corned beef with spice packet flat cut
- 2 ½ cups water
- 4 large carrots Peeled and cut into chunks
- 8 red or yellow potatoes halved or quartered depending on size
Instructions
- In the slow cooker, add onions to the bottom, then put corned beef on top.
- Sprinkle the content of the spice pack on top of the beef.
- Pour in water.
- Cover and cook on low for 8-9 hours.
- Add potatoes and carrots halfway through cooking.
- Slice the beef and serve with the veggies.

👩🏫 My Personal Experience
I haven't tried corned beef for years but the moment I smelled this corned beef cooking, I was hooked 😍. When the boys came back from school they started sniffing around my slow cooker like hungry sharks, I love it when they do that. I did not expect it to taste that great either, especially when I opened the package and was horrified with the amount of fat on top.
Seriously, this turned me down immediately 😑.
But being an adventurer in the kitchen, I decided to proceed. I added some colorful veggies but did not add cabbage, as this would have made my kiddos run away.
It is as simple as throwing everything in, set and forget. My kinda meal.
