- Make the crumb topping by combining the brown sugar, cinnamon and melted butter in a medium bowl and mix well.
- Add flour and mix until the mixture forms crumbs and holds together when pinched. Set aside.

- In a large bowl, add flour, baking powder, salt, cinnamon and apples. Mix together well.

Apple Cinnamon Crumb Cake
Ingredients
- 1 cup oil 235ml
- 1 cup granulated sugar 200g
- 1 cup full fat yogurt 225g
- 3 large eggs
- 1 teaspoon vanilla extract
- 2 cups all purpose flour 240g
- 2½ teaspoon baking powder
- ¼ teaspoon salt
- 1 teaspoon cinnamon
- 2 medium apples peeled and shredded, 2 cups about 200g
For the crumb topping:
- ½ cup brown sugar 65g
- 2 teaspoon cinnamon
- 8 Tablespoons unsalted butter melted
- 1½ cups all-purpose flour 180g
Instructions
Make the crumb topping
- In a bowl, combine brown sugar, cinnamon and melted butter mix well.
- Add flour and mix until the mixture forms crumbs and holds together when pinched.
- Set aside.
Make the cake:
- Preheat the oven to 350°F
- Using a large piece of parchment, cover the bottom and sides of a 10 inch round cake pan. Make sure the parchment is hanging off the sides.
- In a blender combine yogurt, sugar, oil, eggs and vanilla mix until well blended.
- In a large bowl, add flour, baking powder, salt, cinnamon and apples. Mix together well.
- Pour the wet ingredients over the dry one and mix with a spatula.
- Spread mixture in the prepared cake pan.
- Spread crumb topping evenly, pressing it lightly into the batter.
- Bake for 40-50 minutes.
- Allow to cool down in the pan for 15 minutes before attempting to remove.
- Place on a wire rack and let it cool completely for 30 minutes more.
