- Boneless skinless chicken breasts - I prefer to use chicken breasts/ However, you can also use diced boneless skinless chicken thighs.
- Lime juice - Freshly squeezed lime juice gives this dish a bright and tangy flavor. If you don't have fresh limes, bottled lime juice will work as well.
- Orange juice - The combination of lime and orange juice adds a wonderful citrus flavor to the dish.
- Garlic cloves - Freshly minced garlic gives this dish a great depth of flavor. If you don't have fresh garlic, you can use garlic powder instead.
- Seasonings - You will need chili powder, ground cumin, paprika, salt, and black pepper to make your fajita seasoning.
- Oil - Any neutral-tasting oil will work. You can use vegetables, canola, avocado oil, or even olive oil.
- Bell peppers - I used a mixture of green, red, and yellow bell peppers. However, you can use any color you have on hand.
- Onion - When it comes to cooking I like to use a white, sweet or yellow onion.
- Shredded cheese - I like to use either cheddar cheese or Mexican blend cheese, mozzarella cheese would also work.
- Small tortillas - You can use either flour or corn tortillas depending on what your family enjoys.
- Toppings - Use your favorite fajita toppings such as sliced avocado, guacamole, sour cream, fresh cilantro, or any of your favorite toppings.

- In a small bowl add chicken with orange juice, lime juice, oil, spices and garlic mix well. Cover and refrigerate for 30 minutes or up to 24 hours.
- Take chicken out and mix in sliced vegetables then spread everything in your casserole. Bake for 15-20 minutes or until chicken is cooked.
- Sprinkle cheese over then return to oven for another 5 minutes for the cheese to melt.
- Garnish top with fresh cilantro and serve with warm tortillas and your favorite toppings.
👩🍳 Variations to make it your own
- Does your family enjoy spicy foods? If so, add some sliced jalapeno peppers or even red pepper flakes to your marinade.
- For a little extra flavor or if you enjoy Texas Fajitas, then add a can of Rotel tomatoes with green chiles to the chicken mixture before you bake it.
- Prefer beef? You can use steak that is thin strips, however you will need to adjust the cooking time accordingly.

- Slice the chicken breasts into even-sized pieces so that they will cook at the same rate.
- The most important thing to remember is that you don't have to overcook the chicken. Check the internal temperature of the chicken to make sure it reaches 165 degrees f to be safe for eating.
- For easy cleaning, spray your casserole dish with nonstick cooking spray.
🧺 Storage and reheating instructions
Refrigerate -Store leftovers in an airtight container in the fridge for up to 3 days.
Freeze - You can also freeze leftover chicken fajitas in a freezer-safe container for up to three months. Thaw in the fridge overnight before reheating.
Reheat - I've found the best way to reheat fajitas is in the oven. Preheat your oven to 350 degrees F and place the fajitas in an oven-safe dish for about 15 minutes or until heated through.
⌛ Make Ahead
Fajitas are great when reheated so feel free to make them up to 24 hours in advance. However, if you want to save a little time and still make them fresh, you can slice the chicken and marinate them during the day, and then cook them at dinner time when you are ready to eat.
🍽️ Perfect pairings: what to serve with
My family's favorite way to enjoy chicken fajitas is with warm tortillas, sour cream, shredded cheese, guacamole, and salsa. But you can also serve them with Instant Pot Basmati Rice, Black Beans and Chickpea Salad or a side salad for a complete meal. And don't forget the virgin margaritas for a fiesta-worthy meal just like at your favorite Mexican restaurant.

Chicken Fajita casserole
Ingredients
- 1.5 lb chicken breast boneless skinless and cut into thin strips
- ¼ cup lime juice
- ¼ cup orange juice
- 2 garlic cloves minced
- 1 Tablespoon chili powder
- 1 teaspoon cumin ground
- 1 teaspoon paprika
- 1 teaspoon salt or to taste
- ½ teaspoon black pepper
- 3 Tablespoons oil any light tasting oil like vegetable, avocado or light olive oil
- 3 bell peppers green red and yellow thinly sliced
- 1 large onion thinly sliced
- 1 ½ cups shredded cheese cheddar or Mexican blend
For serving:
- 8-10 small tortillas
- ¼ cup fresh cilantro chopped
- Fajita toppings of choice like avocado guacamole, sour cream… etc
Instructions

- Preheat oven to 425F, lightly grease a 13x9 casserole dish.
- Take chicken out and mix in sliced vegetables then spread everything in your casserole.
