An easy seasoned ground beef Doritos casserole that has a delicious TexMex beefy cheesy crunch using nacho cheese Doritos. This family-friendly casserole recipe is one the kids will be asking for again and again.

Doritos casserole is a simple meal that can easily be made by browning ground beef, add packets of taco seasonings and layering it all in a casserole dish with beans, Rotel diced tomatoes, and cheese. We love to use nacho cheese Doritos and then add our favorite taco toppings.

This Doritos casserole is the perfect make ahead meal. It's also a great way to use up leftover taco meat. Adding diced tomatoes, beans, cheese, Doritos and all your favorite TexMex toppings, this is one meal that everyone will adore!

  • In a large skillet over medium heat sauté onion until translucent. Add ground beef and keep stirring until it brown all over. Drain excess fat.
  • Mix in taco seasoning, both Rotel cans and beans. Remove from heat and mix in sour cream.
  • Lightly spray a 3qt baking dish and add 2 cups of Doritos and spread evenly to cover the bottom of the dish.
  • Spoon half of the meat mixture over the chips and top with a cup of cheese.

  • Follow with a layer of Doritos and the remaining meat mixture. Top with remaining Doritos and cheese.

  • Lightly spray a large piece of foil and cover the dish. Bake for 30 minutes covered then uncover and bake for about 7-10 more minutes.

💡 Tips

  • Open the Doritos bag then fold the top and crush them lightly with your hands, do not over crush them until they are turned into a powder.
  • We love our ground beef Doritos casserole extra beefy but you can lower the cost of the dish by using only one pound of ground beef.

🧺 Storage

Store leftover Doritos casserole in an airtight container and refrigerate for up to 3 days. Reheat in the oven.

👩‍🍳 Variations

  • You can make this casserole with any ground meat you like.
  • Use any Doritos flavor you have on hand or better yet make homemade doritos.
  • Add different sorts of beans, such as black beans.
  • Pour in a can of cream of chicken soup if you do not have sour cream or are looking for a more creamy dish.
  • Add more veggies to the meat mixture.
  • You can use Monterey jack cheese in place of cheddar if you wish.

Equipment

  • 1 large skillet
  • 1 3 qt baking dish (13x9 casserole pan)

Ingredients

  • 1 Tablespoon oil
  • 1 medium yellow onion diced
  • 2 pounds ground beef
  • 2 packets taco seasonings
  • 1 can Pinto beans 15oz
  • 2 cans Rotel tomatoes 10oz each
  • 1 cup sour cream
  • 2½ cups shredded sharp cheddar
  • 1 bag family size Nacho Cheese Doritos lightly crushed

Optional toppings:

  • lettuce shredded
  • pickled jalapeños
  • sour cream
  • guacamole
  • cilantro
  • Pico de gallo

Instructions

  • Preheat oven to 375°F.
  • In a large skillet over medium heat add oil then sauté onion until translucent.
  • Add ground beef, break apart and keep stirring until it browns all over. Drain excess fat.
  • Mix in taco seasoning, both Rotel cans and beans.
  • Remove from heat and mix in sour cream.
  • Lightly spray 3qt baking dish and add 2 cups of Doritos and spread evenly to cover the bottom of the dish.
  • Spoon half of the meat mixture over the chips and top that with a cup of the cheese.
  • Follow with a layer of Doritos then the remaining meat mixture then a cup of cheese.
  • Top with the remaining Doritos and sprinkle the rest of the cheese over.
  • Lightly spray a large piece of foil and cover the dish.
  • Bake for 30 minutes covered then uncover and bake for about 7-10 more minutes.
  • Serve with your favorite taco toppings.
