- Wild oregano leaves - This will add a unique and delicious flavor to your Za'atar blend. If you can't find wild oregano, regular oregano will work but it won't give the same taste.
- Sumac - This is the key ingredient that gives Za'atar its tangy flavor. You should be able to find sumac at most grocery stores or Middle Eastern markets.
- Toasted sesame seeds - Toasting raw sesame seeds brings out their nutty flavor and adds a nice crunch to the blend.
- Sea salt - A pinch of sea salt helps balance out the flavors in Za'atar.

Step by step: instructions

- Use a mortar and pestle to grind the oregano leaves finely then place in a bowl.
- Add the rest of the spices and mix well.
- Place in a jar with a fitted lid.
Variations to make it your own
- If you want to add a little more flavor to your zaatar recipe, you can add some wild thyme.
- For a little more seasoning you can add some black pepper or even a little crushed red pepper flakes if you like a little heat.
My notes
- If you don't have a mortar and pestle you can use a spice grinder or even a coffee grinder.
- Using a coarse salt? Grind up some so that you don't have an overpowering salt flavor.
- Can't find toasted sesame seeds at your local grocery store? You can toast them in a small skillet for just a couple of minutes until they brown slightly. Make sure to use a dry pan, no oil is needed.
How to store leftovers
Refrigerate - Store the za'atar seasoning in an airtight container like a small jar in the fridge for up to 6 months. I like to keep it towards the back on a bottom shelf to keep it away from the light.
Freeze - You can also freeze it in a freezer-safe bag or container for up to one year. No need to thaw it before using it.
Make ahead
The best thing about this za'atar spice mix is that you can make it ahead of time since it stores well. I like to make a big batch because I use it often in cooking. However, if your family doesn't use it often feel free to make it in small batches as you need it.
Perfect pairings: what to serve with

Ingredients
- ¼ cup wild oregano leaves
- 2 Tablespoon sumac
- 1 Tablespoons toasted sesame seeds
- Sea salt to your liking 1 teaspoon
Instructions
