- Tortellini - fresh tortellini is used, we love good quality cheesy tortellini.
- Grated tomatoes - Roughly three medium sized tomatoes equals a pound of tomatoes.
- Chicken stock - you can use chicken broth instead also use water, or vegetable stock to make this a vegetarian dish.
- Spinach: It is best to use fresh spinach for this recipe.

- Set the instant pot to sauté option, add oil and sauté onions until translucent, about 3 minutes.
- Add garlic and cook for another 30 seconds then add spices and grated tomatoes.
- Pour in stock and cancel the sauté option. Set the instant pot for pressure cook on high for zero minutes and seal.
- Pour in the tomato sauce, tortellini and spinach.
- Set it again to sauté and when the mixture boils stir in cream, adjust taste and serve.
💡 Tips
Time saving tips: You can use store bought marinara sauce and pour it with stock in the instant pot and proceed with the recipe from there.
- You can also use store bought crushed tomatoes, instead of grating your own.
- If you do not have dry basil or oregano you can use Italian seasoning.
- Chop some fresh basil on top for extra flavor.

- Leftover instant pot tortellini soup can be stored in an airtight container and refrigerated for up to 4 days.
- Reheat tortellini soup in microwave or stove top until thoroughly heated.
⌛ Make Ahead
Tortellini soup comes together quickly, however you can prep some of the ingredients such as grating the tomatoes, crush the garlic and dice the onion ahead of time. Store everything covered in your refrigerator until ready to make the soup in your instant pot.

- Homemade garlic bread, crusty bread or a green salad goes best with a delicious bowl of tortellini soup.
- A sprinkle of Parmesan cheese on top is a welcome addition as well.
- Add a little spice with a dash of red pepper flakes.

- You can add Italian mild sausage to the soup. Just add it when you are sautéing the onion and garlic and cook until no longer pink before adding the rest of the ingredients.

Yes, this recipe can easily be doubled so you can freeze a batch for later. Let the tortellini soup cool completely and then either store in a freezer safe container or even a freezer zip-loc type bag, seal and store.

Ingredients
- 2 Tablespoons olive oil
- 1 small onion diced
- 2 garlic cloves crushed
- 1 lb tomatoes 1 ½ cups grated
- ½ teaspoon salt
- ½ teaspoon dry basil
- ½ teaspoon dry oregano
- ¼ teaspoon black pepper ground
- 2 ¼ cup chicken stock or water
- 1 cup tomato sauce
- ¼ cup heavy cream
- 1 cup baby spinach
- 1 pound fresh cheese tortellini
Instructions
- Set the instant pot to sauté option, add oil and sauté onions until translucent, about 3 minutes.
- Add garlic and cook for another 30 seconds then add spices and grated tomatoes.
- Pour in stock then cancel the sauté option.
- Set the instant pot for pressure cook on high for ZERO minutes and seal.
- When the instant pot is done do a manual release of pressure.
- Mix in the tomato sauce, tortellini and spinach.
- Cancel the pressure cook option and set it again to sauté.
- When the mixture boils stir in cream, adjust taste and serve.

The Instant Pot Tortellini Soup looks delicious, but i don't have an Instant Pot. What would be the changes i would need to do to use just a regular pot instead?

Lisa, you will saute onion and garlic as usual in your soup pot then add the grated tomatoes, stock, cream and all the spices and simmer for 20 minutes. Add the tortellini and cook for another 10 minutes or until it is cooked.

I confess I have never heard of grating tomatoes? So when it says "1 lb tomatoes" you mean whole tomatoes, not canned. Correct? Wish there was a video to clarify some of this. Looks delicious, though.
