Mushroom and Rice Bake

Mushroom and rice bake is an easy to prepare side dish that packs a lot of flavor. This baked dish is a delicious combination of fresh mushrooms, herbs, onions and rice.

Easily start on your stove top sautéing sliced mushrooms, onions, herbs and garlic. Pour it into a casserole dish with the rice, broth and water. Wrap in foil and let it cook. This simple baked rice dish has gone up a notch with the earthy taste of mushrooms and the simple fragrance of rosemary in each bite.

Mushroom and rice bake is full of healthy goodness, flavor, and an amazing taste. This is the recipe you will use again and again for all your holiday get-togethers. This baked dish is easy to make, and it only requires 10 minutes of prep.

📋 Ingredient Notes / Variations

  • Olive oil and unsalted butter
  • Onion and garlic: Yellow onion goes best with this dish.
  • Mushroom: White mushrooms are used, you can get already sliced or slice them yourself.
  • Rosemary: Fresh is best and shouldn't be omitted. Only a few sprigs are needed.
  • Uncooked rice: Long grain white rice is recommended, as brown rice takes longer to cook.
  • Beef Broth: Use store bought or homemade beef broth.

🥄 Step by step: instructions

Note: This is an overview of the instructions. The detailed instructions are in the recipe card below.

  1. Preheat oven to 350°F. In a large skillet over medium heat add oil and 2 tablespoons of butter. Add onions and sauté until translucent, add garlic and cook for 30 seconds.
  2. Add sliced mushrooms, spices and mix well continuing to cook for 3 more minutes. Turn heat off.
  3. Mix remaining butter and pour in the bottom of a 13x9 baking dish.
  4. Add rice and mix so the rice is covered with the melted butter.
  5. Pour in broth and water then pour the mushroom ix on top. Cover with foil and bake for 40 minutes. Uncover and continue to bake for another 10 minutes until the edges start to brown and get a little crispy.
  6. Remove from heat and let it stand for 5 minutes. Fluff with a fork before serving.

👩‍🍳 Variations to make it your own

  • Add in peas, corn, green beans, or any vegetables you like.
  • Swap out fresh rosemary for fresh thyme.
  • Use vegetable broth or chicken broth.
  • Add in a packet of french onion soup mix for a richer flavor.

  • I like to soften the mushrooms and onions first as this makes a more flavorful dish.
  • If you are in a hurry you can place everything in the casserole, cover and bake.
  • Make it a vegan dish by using vegan butter, or all oil, and vegetable broth.
  • I prefer using homemade beef broth, it gives a more pleasant flavor than store bought.
  • Don't skip the fresh herbs, it gives such a nice flavor.
  • When reheating, add 1-2 tablespoon of water to help keep the rice from getting mushy.

🧺 How to store leftovers

Refrigerate: Leftover mushroom and rice bake can be stored in an airtight container in your refrigerator for up to 3 or 4 days.

Freeze: Completely cooled rice can be frozen for up to one month. The texture might change, though.

Reheat: Thaw in the fridge overnight, then reheat on the stove with a splash of water. You can also reheat individual portions in the microwave.

🍽️ Perfect pairings: what to serve with

  • Greek Salad Recipe with Simple Vinaigrette - you don't need a fancy salad dressing.
  • 3 Ingredient Air Fryer Frozen Asparagus or Air Fryer Frozen Broccoli - both of these side dishes would be a great choice with this meal.

Can I use canned mushrooms in mushroom rice?

If you would like to use canned mushrooms, I would omit sautéing them as it says in the recipe card.

This Mushroom rice is a comforting and savory side dish that will add a luxurious richness to your meal. Buttery earthy mushrooms with perfectly flavorful rice is what you need for dinner tonight.

Equipment

  • 1 large skillet
  • 1 13x9 baking dish

Ingredients

  • 2 Tablespoons olive oil
  • 6 Tablespoons butter divided
  • 1 medium onion chopped
  • 1 clove garlic minced
  • 8 oz sliced mushroom (227g)
  • 1½ teaspoon fresh rosemary thinly chopped
  • ½ teaspoon salt or to your liking
  • 2 cups white long grain rice
  • 2½ cups beef broth
  • 2 cups boiling water

Instructions

  • Preheat oven to 350°F.
  • In a large skillet over medium heat add oil and 2 tablespoons butter.
  • Add onions and sauté until translucent. Add garlic and continue to cook for 30 seconds.
  • Add sliced mushrooms, spices and mix well continuing to cook for 3 more minutes. Turn heat off.
  • Melt the remaining butter and pour into the bottom of a 13x9 baking dish.
