Ingredients
- 3 cups cooked chicken shredded , about 1 ½ pounds
- 1 Tablespoon poppy seeds
- 1 can ((10.75 oz)) condensed cream of chicken soup with herbs or use cream of chicken soup substitute
- 1 cup sour cream or Greek yogurt
- 2 cups buttery crackers crushed about 32-36 cracker
- 2 Tablespoons butter melted
- chopped parsley or green onions optional to garnish
Instructions
- Preheat oven to 350°F and spray a 9x13 casserole with cooking spray.
- In a deep bowl combine chicken, soup, sour cream and poppy seeds.
- Spread the mixture at the bottom of the casserole.
- In a medium bowl add crushed crackers and melted butter.
- Toss to combine.
- Sprinkle the crackers over the chicken evenly.
- Bake in the oven for 20 minutes or until top is golden brown.
- Serve garnished with chopped green onions or parsley if desired.

- If you need it extra saucy add another can of condensed soup.
- Use any condensed soup you like to flavor the dish in your own way.

- If you don't have any leftover chicken or a rotisserie chicken, you can boil chicken breasts for 15-20 minutes (until no longer pink) and then shred for the recipe.
How to Store, Freeze, and Reheat
Place leftover poppy seed chicken casserole in an airtight container in the refrigerator for up to 3 days or in the freezer for up to 2 months. Let thaw overnight in the refrigerator before reheating in the oven or microwave.
How to make ahead
- Make the chicken mixture and spread in the casserole dish and cover. Make the cracker mixture and place in another small container. Refrigerate both separately for up to 2 days. When ready to bake, spread the crackers over and bake as directed.
- To freeze, place the chicken mixture in an airtight container covered directly with plastic wrap, then place the lid of the container on. Freeze for up to 2 months. Make sure to freeze the cracker mixture separately. Thaw in the fridge overnight, then bake as directed.
