Easy Berry Cobbler


My recipes have mostly stuck to classics made a little easier, and for the longest time I felt like these internet recipes were kind of cheating. But after experimenting with a few viral recipes myself, I've come around. If social media food trends have taught us anything, it's that some of the best recipes require the least amount of effort.

This two-ingredient berry cobbler has been a favorite here for the last few weeks. We've made it with different frozen fruits and played with the cookies as well. This is a recipe you've got to try.

Ingredients

  • Frozen berries
  • A package of store-bought sugar cookie dough

Pro Tip

You can make this with literally any frozen fruit you have tucked away in your freezer. Dark sweet cherries, tropical mango chunks, classic peaches, or a vibrant mixed berry blend all work perfectly.

If you need an easy dessert make this viral cobbler recipe with any frozen fruits you have. It is fruity, sweet delicious and the best part is, it needs only two ingredients.

Ingredients

  • 1 bag (10oz) frozen berries
  • 6 sugar cookie dough

Optional: (to take it to the next level)

  • 1 Tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1 Tablespoon cornstarch

Instructions

  • Preheat oven to 400ยฐF/200ยฐC.
  • Toss frozen berries with lemon juice, cornstarch and vanilla if using then dump them into a baking dish.
  • Top with cookie dough pieces then bake in the center of your oven for 30-35 minutes or until the top is golden brown and crispy around the edges.
  • Serve topped with a scoop of vanilla ice cream

Notes

  • Don't thaw the fruit beforehand! Keeping the fruit frozen allows the cookie dough sufficient time to bake and crisp up perfectly without the fruit turning to complete mush or burning before the top is done.
  • In the original viral recipe creators used Sweet Loren's sugar cookie dough to make it gluten free and vegan. But you can use whatever cookie dough you like.

How to Make Berry Cobbler

1- If you are using the optional upgrades, toss your frozen berries directly with the lemon juice, cornstarch, and vanilla extract in a small bowl until evenly coated.

If keeping it to 2 ingredients, simply dump the frozen berries straight from the bag into your baking dish. Top with 6 sugar cookie dough pieces and distribute them evenly. Leave a few small gaps so the fruit can bubble through.

2- Bake in the center of your oven for 30โ€“35 minutes or until the top is golden brown and crispy around the edges. Let cool for 5 minutes as the fruit will be incredibly hot, then serve topped with a generous scoop of vanilla ice cream.

FAQs

What other flavor variations can I try?

Peach Snickerdoodle Cobbler: Swap the frozen berries for frozen sliced peaches, and use snickerdoodle cookie dough instead of sugar cookie dough for a warm cinnamon kick.
Tropical Mango and Coconut: Use frozen mango chunks, toss with a little lime juice, top with sugar cookie dough, and sprinkle shredded coconut over the top during the last 10 minutes of baking.
Apple Pie Style: Use frozen spiced apples and top with gingerbread or oatmeal cookie dough for a comforting autumn variation.
Keep in mind that peaches and apples were less jammy than berries, so you might want to add more liquid and sugar to the mix.

How to store leftovers?

If you miraculously have leftovers, let the cobbler cool completely. Cover the baking dish tightly with aluminum foil or transfer to an airtight container. Store in the refrigerator for up to 3 to 4 days.
To Reheat: reheat leftovers in the oven or toaster oven at 350ยฐF/175ยฐC for about 10 minutes until warmed through. I do not recommend the microwave.

Can I use fresh berries instead of frozen?

Yes, you can! However, fresh fruit cooks faster and releases its juices quicker than frozen fruit. If using fresh fruit, keep a close eye on the oven around the 20-25 minute mark to ensure the bottom doesn't scorch before the cookie dough finishes baking.

Is this recipe scalable for a larger crowd?

Absolutely! This recipe scales effortlessly. To serve a family of 6 to 8, use a standard 9x13-inch baking dish, 2 standard bags of frozen fruit (20-24 oz total), and 12-14 pieces of sugar cookie dough. Keep the baking temperature the same, but add 5-10 minutes to the total bake time.
