Bruschetta dip

  • One of the best things about this easy bruschetta recipe is that you only need simple ingredients, so you don't have to spend a lot of time trying to track down hard-to-find ingredients. 
  • This recipe is also great because you can make it ahead of time so that you spend less time in the kitchen and more time with your family and friends. 
  • The creamy cheese base, and fresh tomato and basil topping, make for a flavorful and refreshing combination that will be a crowd-pleaser. 

Whether you're hosting a summer barbecue, having a game night with friends, or just want a delicious appetizer to snack on while watching your favorite movie, this bruschetta dip is the perfect choice.

Ingredients you'll need

📋 Ingredient Notes

  • Roma tomatoes - If you can't find good quality Roma tomatoes, you can also use cherry tomatoes. 
  • Basil leaves - Look for fresh basil that is bright green and has a strong aroma. 
  • Fresh garlic clove - Fresh garlic is best for this recipe, but you can also use garlic powder if needed. 
  • Extra Virgin olive oil - Use good quality extra virgin olive oil for the best flavor. You can also use avocado oil as a substitute.
  • Balsamic vinegar -  This adds a tangy sweetness to the bruschetta. You can also use red wine vinegar as a substitute.
  • Salt - Season to taste with salt.
  • Feta cheese -  This adds a creamy and tangy element to the bruschetta. You can also use goat cheese as a substitute.
  • Cream cheese - Make sure the cream cheese is softened before using it, otherwise it will be difficult to mix with the other ingredients. 
  • Sour Cream - Feel free to use full-fat or light sour cream, depending on your preference. Greek yogurt can also be used as a healthier option.
  • Fresh lemon juice -  This adds a bright and refreshing taste to the bruschetta. It is important to use freshly squeezed lemon juice for the best flavor.
  • Red pepper flakes -  These add a subtle kick of spice to the bruschetta. Adjust the amount according to your taste preference.
  • Parmesan cheese -  This adds a salty and nutty flavor to the bruschetta. Grating fresh parmesan cheese is recommended for the best taste.

Adaptable recipe – make it your own!

  • For a little extra flavor, you can add some diced red onions to your tomato topping. It adds such a nice bite to it. 
  • You can also add additional fresh herbs to the cream cheese mixture for even more flavor.

Step by step: instructions

  1. Core and dice tomatoes into small cubes.
  2. În a medium bowl, place tomatoes, basil, garlic, olive oil, balsamic vinegar, and salt. Toss to coat. Set aside to marinate for 10 minutes.
  3. In the bowl of your food processor, add all cheese dip ingredients. Puree for 3-4 minutes until smooth and creamy, scraping the bowl in the middle.
  4. Scoop the cheese mixture onto a shallow serving plate or bowl and top with bruschetta dip. Sprinkle top with red pepper flakes, parmesan cheese, and more basil.

My notes

  • For a little extra flavor and flare, add a drizzle of balsamic glaze to the top of the finished dip. 
  • If you are not a fan of spice, feel free to leave the crushed red pepper flakes out of your dip.
  • When you are in the grocery store look for ripe tomatoes that do not have any blemishes.

Should bruschetta dip be served warm or cold?

We prefer to serve this dip cold, I don't recommend heating it, as it can make the tomatoes mushy.  

Is Bruschetta dip gluten-free?

Naturally, it is gluten-free; just make sure to serve it with gluten-free bread or crackers.

What kind of tomatoes should I use?

Ripe, flavorful tomatoes are best. Roma tomatoes are commonly used, but you can use any tomatoes you like, such as cherry tomatoes, grape tomatoes, or even heirloom tomatoes, for a more vibrant flavor.

Storage

Refrigerate - Store the leftovers in an airtight container in the fridge for up to 3 days. If you don't have a lid for your serving bowl, you can cover it with plastic wrap to keep it fresh. 

Freeze - Due to the dairy in this dip, I don't recommend freezing it.

Make ahead

This creamy dip is great to make ahead.  However, I recommend that you don't make the tomato mixture until you are ready to serve it, otherwise it can become watery.

  • I like to serve this easy dip with pita chips, crusty bread, or even Flatbread Crackers.

Ingredients

For the bruschetta:

  • 4 Roma tomatoes
  • ¼ cup basil leaves chopped
  • 1 garlic clove minced
  • 1 Tablespoons Extra Virgin olive oil
  • 1-2 teaspoons balsamic vinegar
  • Salt to taste

For the cheese:

  • 8 oz feta cheese block crumbled
  • ½ block cream cheese 4 oz
  • ½ cup sour cream
  • 1 garlic clove minced
  • 1 Tablespoon lemon juice freshly squeezed
  • 1 Tablespoon olive oil
  • Salt to taste

To garnish:

  • More basil leaves chopped
  • Red pepper flakes
  • Parmesan cheese freshly grated

Instructions

  • Core and dice tomatoes into small cubes.

Meanwhile make the cheese mix:

  • Scoop the cheese mixture onto a shallow serving plate or bowl and top with bruschetta dip.
  • Sprinkle top with red pepper flakes, parmesan cheese and more basil.
  • Serve with crackers. Pita chips or toasted bread.

    I made this for a Christmas party I attended last weekend. It was a huge hit. I waited and added the fresh basil on top right before going and it was beautiful and delicious.
