This homemade garlic oil is a staple in my kitchen. It adds so much flavor to dishes and is incredibly easy to make.

This oil can be used in so many different ways. From adding flavor to your favorite savory recipes to a dipping sauce for fresh bread, it will bring a ton of flavor to your meal.

📋 Ingredient Notes

  • Garlic - You will need some fresh cloves of garlic to make this oil. I don't recommend using the jarred kind for this oil.
  • Olive oil - Pick up a high-quality olive oil to use as the base for your garlic oil. Extra virgin or virgin olive oil is best for flavor.
  • Herbs - Choose your favorite herbs to infuse into the oil. Rosemary, thyme, and bay leaves are what I used.

🥄 Step by step: instructions

Note: This is an overview of the instructions. The detailed instructions are in the recipe card below.

  1. In a small saucepan, place whole cloves of garlic and fresh herbs, then pour olive oil over.
  2. Heat on medium heat until it boils, then reduce heat. Continue cooking on low heat for 15 more minutes.
  3. Turn the heat off and let it cool down completely. Remove garlic and pour oil into a jar with a fitted lid.

💡Let's make the perfect recipe: Amira's tips

  • There's no need to dice up the raw garlic.  Just peel the whole garlic cloves and toss them in your pot. 
  • You don't have to remove the garlic cloves from the oil, but if you don't remove them you will need to store the oil in the fridge, and it will only store for a few days. 
  • When you remove the garlic, you can use it in dishes if you want instead of trashing it. 

🧺 How to store leftovers

Storage -  Store this fragrant oil in a clean jar at room temperature for up to two weeks. I recommend that you store it in a glass jar instead of plastic because the plastic will absorb the garlic flavor. 

Freezing - You can also freeze individual portions of this oil in ice cube trays. Once they are frozen solid, remove the cubes from the tray and store them in a freezer bag for up to 3 months. 

⌛ Make Ahead

​One great thing about this simple recipe is that it comes together quickly, and can be made ahead of time. Feel free to make a batch ahead and keep it on hand in the kitchen for your meals for the week.

🍽️ Perfect pairings: what to serve with

  • This delicious garlic oil can be used in so many different ways. Try using it in this Olive Garden Chicken Scampi or as a dipping oil for this Skillet Flatbread.  
  • It is amazing drizzled over a hot bowl of Ful Medames, I can't tell you how tasty this is.
  • Use it as a brush for Bruschetta with Balsamic Glaze or Bruschetta Pizza.

👩‍🍳 Variations to make it your own

  • Out of olive oil? Next time try using vegetable oil or canola oil instead. 
  • You can also add some lemon peel to the oil while it simmers on the stove, it will give the oil a nice citrus flavor to balance with the garlic flavor. 
  • The options of herbs that you can use are endless, feel free to try different herbs to find your perfect flavor.

What is the garlic oil good for?

It is great when used for salad dressing, an oil for your favorite savory dishes, or even as a finishing oil for your meals. 

Is it safe to eat the garlic from the garlic oil? 

Yes, as long as the garlic is not more than three days old and has been kept refrigerated after it's been used, it can be eaten or used for cooking.
