- Garlic - You will need some fresh cloves of garlic to make this oil. I don't recommend using the jarred kind for this oil.
- Olive oil - Pick up a high-quality olive oil to use as the base for your garlic oil. Extra virgin or virgin olive oil is best for flavor.
- Herbs - Choose your favorite herbs to infuse into the oil. Rosemary, thyme, and bay leaves are what I used.

🥄 Step by step: instructions

- In a small saucepan, place whole cloves of garlic and fresh herbs, then pour olive oil over.
- Heat on medium heat until it boils, then reduce heat. Continue cooking on low heat for 15 more minutes.
- Turn the heat off and let it cool down completely. Remove garlic and pour oil into a jar with a fitted lid.

- There's no need to dice up the raw garlic. Just peel the whole garlic cloves and toss them in your pot.
- You don't have to remove the garlic cloves from the oil, but if you don't remove them you will need to store the oil in the fridge, and it will only store for a few days.
- When you remove the garlic, you can use it in dishes if you want instead of trashing it.
🧺 How to store leftovers
Storage - Store this fragrant oil in a clean jar at room temperature for up to two weeks. I recommend that you store it in a glass jar instead of plastic because the plastic will absorb the garlic flavor.
Freezing - You can also freeze individual portions of this oil in ice cube trays. Once they are frozen solid, remove the cubes from the tray and store them in a freezer bag for up to 3 months.

One great thing about this simple recipe is that it comes together quickly, and can be made ahead of time. Feel free to make a batch ahead and keep it on hand in the kitchen for your meals for the week.

- In a small saucepan, place whole cloves of garlic. fresh herbs then pour olive oil over.
- Heat on medium heat until it boils then reduce heat. Continue cooking on low heat for 15 more minutes.

Notes
- Keep stirring and watch out for the garlic so it does not brown too much as this will make the oil taste bitter.
