I can’t think of many dinners that are easier than this recipe. Gyros are such a fun yet simple way to add some extra flair to your dinner table. Slow-cooked for hours, the chicken comes out tender, juicy, and loaded with Mediterranean flavor–aka perfect for busy weeknights!

Ingredients

For the chicken:

  • 2 pounds chicken thighs boneless skinless
  • 3 garlic cloves minced
  • 1 Tablespoon red wine vinegar
  • 3 Tablespoons lemon juice
  • 1 Tablespoon olive oil
  • 2 Tablespoon Greek yogurt
  • 1 ½ Tablespoons dry oregano
  • 1 teaspoon dry basil
  • 1 teaspoon salt or to taste
  • ½ teaspoon black pepper

For serving:

  • Fresh tomatoes diced
  • Cucumber diced
  • Tzatziki sauce
  • Pita bread or flat bread

Instructions

  • In the slow cooker add all the marinade ingredients and mix well.
  • Mix in and coat well with the marinade.
  • Cook chicken for 3-4 hours on high or 5-6 hours on low.
  • Take the chicken out on a cutting board and cut chicken thigh into thick strips.
  • Warm up the pita, spread some tomatoes and cucumber in the middle then top with chicken and tzatziki and serve.

How to Make Chicken Gyros

Ready to make this delicious recipe. Gather your ingredients and your slow cooker, and let's get cooking.

A note on the ingredients: If you don't have Greek yogurt, you can use regular plain yogurt. Although it gives a delicious taste, you can skip the red wine vinegar if you do not have it on hand. Check out these Oregano Substitutes too.

Step 1: Add all the marinade ingredients to the crock pot and mix until combined.

FAQs

Can I use chicken breast instead of thighs?

Yes, however, chicken breasts will be slightly drier and tougher than chicken thighs.

Can I make this on the stovetop?

Absolutely! Cook thighs in a skillet over medium heat for 6–8 minutes per side, then simmer in the marinade until internal temperature hits 165°F.

How to Store and Reheat

  • Storage: Place leftover chicken in an airtight container and refrigerate for up to 3 days.
  • Freezing: The cooked chicken freezes well! Store it in a freezer-safe bag or container for up to 3 months. Defrost in the refrigerator overnight before reheating.
  • Reheating: Gently reheat the chicken in a skillet over medium heat or in the microwave until warmed through. Add a splash of broth or water to prevent it from drying out.
