Chicken hash brown casserole is a deliciously easy classic casserole dish where all all ingredients are mixed in a large bowl and then baked. Dinner hasn't never been so easy! Hash brown potatoes with tender chicken in a creamy sauce loaded with cheese and topped with buttery cracker crumbs.

Toss your favorite veggies into the mix or top with your favorite hot sauce. This versatile casserole dish will be one that you'll be making again and again.

Chicken Hashbrown Casserole recipe is a delicious casserole your entire family will like.
  1. In a large bowl mix together hash browns, bell pepper, chicken, cheddar cheese, sour cream, milk and cream of chicken soup. Adjust seasoning.
  2. Spoon the mixture evenly in your prepared baking dish. Covered with foil and bake in the center of your oven for 30-40 minutes.
  3. While the casserole dish is baking combine crushed crackers with melted butter and toss to coat.
  4. Spread the crackers mixture over the top of the casserole and return to oven for another 10-15 minutes or until top is golden brown and dish is bubbly.

👍 Tips

  • Using bell pepper is not something authentic to this recipe, you can skip it if you do not like but it really makes the dish more flavorful.
  • You can use any leftover cooked chicken or rotisserie chicken in this recipe.
  • Start with ¼ cup of milk and add more if you feel the mixture is too thick.
  • If you do not have sour cream you can use Greek yogurt or cream cheese for a richer casserole.

Place leftover casserole in an airtight container and refrigerate for up to 4 days. You can freeze leftovers by wrapping tightly and freeze for up to 3 months.

⌛ Make Ahead

Assemble then cover and refrigerate for up to 24 hours before baking. When ready to bake, take the dish out on the counter to come to room temperature then proceed with the recipe.

Yes, if your hash browns are frozen, you will want to thaw them out in the refrigerator overnight. Be sure to pat them dry with a paper towel if there is lots of moisture to avoid a soggy casserole.

Equipment

  • 9x13 oven safe casserole dish

Ingredients

  • 1 bag hash browns (30 oz) thawed
  • 2 cups shredded cooked chicken
  • 1 bell pepper, any color diced
  • 2 cups cheddar cheese
  • 2 cups sour cream
  • 1 can cream of chicken soup (10.75 oz)
  • ¼ cup milk
  • salt and pepper to taste

Topping:

  • 2 cups crushed buttery crackers such as Ritz
  • ¼ cup butter melted

Optional for garnish:

  • green onions chopped

Instructions

  • Preheat oven to 350°F and spray a 9x13 baking casserole dish with cooking oil.
  • In a large bowl mix together hash browns, bell pepper, chicken, cheddar cheese, sour cream, milk and cream of chicken soup.
  • Make sure to mix well until everything is covered in sauce.
  • Taste the mixture and add salt and black pepper to your liking.
  • Spoon the mixture evenly in your prepared dish.
  • Cover with aluminum foil and bake in the center of your oven for 30-40 minutes or until potatoes are tender and cooked.
  • While the dish is baking combine crushed crackers with melted butter and toss to coat.
  • Spread the crackers mixture over the top of the casserole dish and return to oven for another 10-15 minutes or until top is golden brown and dish is bubbly.
