These cups are such a fun little sweet treat! My kids love that dessert cup is just for them. They love to assemble their own cup, adding a touch of caramel or a drizzle of chocolate syrup or topping of rainbow sprinkles.

  • For this recipe I would recommend using small juice glasses like these ones or these dessert glass jars.

  1. Crush the biscuits/graham crackers in a plastic bag using a rolling pin or in the food processor until we have tiny pieces and mostly crumble texture.
  2. Add the melted butter and 1 teaspoon of powdered sugar and mix well.
  3. Spread it on a plate and allow to sit.

  1. In a medium sized bowl whip the heavy cream with an electric mixer until it starts to thicken a bit.
  2. Add the confectioner's sugar and continue to whip until we have stiff peaks. Do not whip more than needed else the air will be knocked out and we won't get an airy texture.
  3. In a medium sized bowl loosen the cream cheese with an electric mixer until smooth. Add roughly chopped strawberries to a food processor or blender. Blend until a puree consistency. Add the strawberry puree in parts.
  4. Add vanilla and make sure it is incorporated in the mix. Now add the strawberry puree in parts. Continue mixing and beat until fully incorporated.

  1. Add 2 ½ tablespoons of cracker crumble to a serving glass or dish.
  2. Spoon in 5-6 tablespoons strawberry cheesecake mixture on top.
  3. Add 1 tablespoon of the strawberry puree on top (optional). Top with fresh strawberry slices. Chill for at least 30 minutes. Serve cold and enjoy!

💡 Tips

  • You can place the graham crackers in the food processor instead.
  • Fresh cream can also be used instead of the whipping cream. Just whip it a little longer.
  • For a prettier dessert, if you're having guests, use a pastry bag to pipe in the whipped cream. Or use the back of a spoon to smooth it down.
  • Use a smaller cup to push down or pack down the graham cracker crumbs.

  • These strawberry cheesecake cups can be kept covered with plastic wrap in the refrigerator for up to 3 days.

💬 FAQs

What can I use instead of graham crackers?

If you aren't able to find graham crackers, some other ideas are digestive biscuits, Biscoff/tea crackers, or even shortbread or gingerbread cookies. If you're feeling adventurous, try crushed pretzels, chocolate or any other kind of crisp cookies.

Can I use strawberry jam?

Yes! You can use whole fruit preserves into the cream cheese mixture and leave out the powdered sugar, especially if the preserves or jam already have added sugar.

Equipment

Ingredients

  • 9 each biscuits or graham crackers
  • 1 teaspoon powdered sugar
  • 2 Tablespoons melted butter

For whipped cream mix:

  • ½ cup heavy whipping cream
  • 2 Tablespoons powdered sugar

For cheesecake mix

  • 8oz cream cheese block 225 gm
  • ¾ teaspoon vanilla extract
  • ⅓ cup powdered sugar
  • ⅔ cups strawberry puree (about 5-6 medium sized strawberries)
  • Fresh strawberry for garnish

Instructions

For the Base/Cracker Crumble:

  • Crush the biscuits/graham crackers in a plastic bag using a rolling pin or in the food processor until we have tiny pieces and mostly crumble texture.
  • Add the melted butter and 1 teaspoon powdered sugar and mix well.
  • Spread it on a plate and allow to sit.

For the Whipped Cream Mix:

  • In a medium sized bowl whip the heavy cream with an electric mixer until it starts to thicken a bit.
  • Add the confectioner's sugar and continue to whip until we have stiff peaks. Do not whip more than needed else the air will be knocked out and we won't get an airy texture.

For the Cheesecake Mix:

  • Add roughly chopped strawberries to a food processor or blender.
  • Blend until a puree consistency is achieved with tiny fruit pieces (about 10-20 secs).
  • In a medium sized bowl loosen the cream cheese with an electric mixer until smooth.
  • Add powdered sugar and continue to beat. Add vanilla and make sure it is incorporated in the mix.
  • Now add the strawberry puree in parts. Continue mixing and beat until fully incorporated.
  • Add the whipped cream mixture to the cheesecake mix bowl and fold in gently until everything is combined well.

Assembling All Elements:

  • Add 2 ½ tablespoons of cracker crumble to a serving glass or dish.
  • Spoon in 5-6 tablespoons strawberry cheesecake mixture on top.
  • Add 1 tablespoon of the strawberry puree on top (optional).
  • Top it off with fresh strawberry slices.
  • Chill for at least 30 minutes. Serve cold and enjoy!

Make Ahead:
  • No bake strawberry cheesecake cups are perfect for make ahead dessert. Fill cups or jars with the crackers layer, top with the cheesecake mixture and refrigerate. Add the strawberry puree layer and additional berries before serving.
Variations:
  • Use different cracker for different flavors like chocolate, gingerbread, vanilla wafers, pretzels or cookies.
  • Use different fruits like raspberries, blueberries, cherries...etc.
  • Use gluten free graham crackers for a gluten free version.
