Jello poke cakes are easy to make and such a fun versatile cake recipe. Liven up a white or yellow cake mix. Use your favorite jello flavor or cake mix to create your own flavor combination!

- Cake mix box
- Oil, I've used vegetable oil
- Eggs
- Vanilla extract
- Raspberry-flavored gelatin: I've used raspberry Jell-O but any raspberry gelatin brand would work.
- Whipping cream
- Vanilla Pudding
- Boiling and cold water
🥄 Instructions

- Prepare and bake cake in a 9x13-inch pan baking pan according to box directions. Let the cake cool.
- While the cake is baking, add whipping cream, powdered sugar, vanilla and pudding mix, if using and whip until mixture thickens.
- In a small bowl, mix together jello powder and boiling water until the jello dissolves. Mix in cold water.
- After the cake has cooled, poke holes in the cake using a wooden spoon handle.
- Ladle raspberry jello mixture evenly over the cake, cover with plastic wrap and refrigerate for a couple of hours.
- When ready to serve, spread the whipping cream mixture evenly on top of the cake to cover the entire cake and decorate with fresh raspberries, if desired.

- Time saving tip: Use a container of frozen whipped topping to top the poke cake. Make sure to thaw before using.

- 1 13x9 inch cake pan
- 1 wooden spoon
Ingredients
- 1 box super moist vanilla cake mix you will also need the ingredients to make it.
- 1 box raspberry jello 3oz
- ¾ cup boiling water
- ½ cup cold water
- 2 cups whipping cream
- 2 teaspoon vanilla extract
- 4 Tablespoons powdered sugar
- 2 Tablespoons instant vanilla pudding mix optional
- Fresh raspberries optional
Instructions
- Prepare and bake cake in a 13x9 inch baking pan according to package directions.
- Let the cake cool down for 20-30 minutes.
While the cake is baking:
- Add whipping cream, powdered sugar, vanilla and pudding mix if using whip until mixture thickens. Cover and refrigerate.
- Mix together jello powder, boiling water until the jello dissolves. Mix in cold water.
- After the cake has cooled, poke several holies in the cake using the handle of a rounded wooden spoon or fork.
- Ladle jello mixture evenly over the cake, cover and refrigerate for a couple of hours.
- When ready to serve, spread the whipping cream mixture over the top evenly and decorate with fresh raspberries, if desired.

I love recipes like this! Easy with a cool twist. My wife saw me making jello and asked 'I thought you were making a cake.'
