Raspberry poke cake is an easy dessert that has the potential to become a summertime favorite. Fresh raspberries atop a creamy frosting over a moist cake with the flavors of raspberry in each bite.

Jello poke cakes are easy to make and such a fun versatile cake recipe. Liven up a white or yellow cake mix. Use your favorite jello flavor or cake mix to create your own flavor combination!

Poke cake recipes are among the easiest and most delicious cake recipes I have ever made.
  1. Prepare and bake cake in a 13x9 inch baking pan according to box directions. Let the cake cool.
  2. While the cake is baking, add whipping cream, powdered sugar, vanilla and pudding mix, if using and whip until mixture thickens.
  3. In a large bowl, mix together jello powder and boiling water until the jello dissolves. Mix in cold water.
  1. After the cake has cooled, poke several holes in the cake using a wooden spoon handle.
  2. Ladle jello mixture evenly over the cake, cover and refrigerate for a couple of hours.
  3. When ready to serve, spread the whipping cream mixture evenly on top of the cake to cover the entire cake and decorate with fresh raspberries, if desired.

  • Time saving tip: Use a container of frozen whipped topping to top the poke cake. Make sure to thaw before using.

🧺 Storage

  • Cover leftover poke cake tightly or place in an airtight container and refrigerate for 5-6 days.
  • For best taste, freezing is not recommended.

After pouring on the jello mixture, the poke cake should be refrigerated for at least 2 hours or even overnight.

Making holes for the poke cake can be done easily by using the handle of a wooden spoon or fork or even a chopstick can be used.

  • Prepare a packet of instant vanilla pudding and spread over the cake before the whipped cream layer.
  • Also try mixing raspberry jello box with the whipped cream and frost the cake with it.
  • Mix some fresh fruits into the whipped cream.
  • You can use powdered whipping cream like dream whip and use fruit juice to make it.

  • 2 mixing bowls
  • 1 13x9 inch cake pan
  • 1 wooden spoon

Ingredients

  • 1 box super moist vanilla cake mix you will also need the ingredients to make it.
  • 1 box raspberry jello 3oz
  • ¾ cup boiling water
  • ½ cup cold water
  • 2 cups whipping cream
  • 2 teaspoon vanilla extract
  • 4 Tablespoons powdered sugar
  • 2 Tablespoons instant vanilla pudding mix optional
  • Fresh raspberries optional

Instructions

  • Prepare and bake cake in a 13x9 inch baking pan according to package directions.
  • Let the cake cool down for 20-30 minutes.

While the cake is baking:

  • Add whipping cream, powdered sugar, vanilla and pudding mix if using whip until mixture thickens. Cover and refrigerate.
  • Mix together jello powder, boiling water until the jello dissolves. Mix in cold water.
  • After the cake has cooled, poke several holies in the cake using the handle of a rounded wooden spoon or fork.
  • Ladle jello mixture evenly over the cake, cover and refrigerate for a couple of hours.
