- Oil - I like to use olive oil, however you can also use canola or avocado oil.
- Mahi Mahi filets - You can use frozen or fresh mahi mahi filets for this delicious meal.
- Butter - I use salted butter, unsalted butter can also be used.
- Tomatoes - I like to use cherry tomatoes in a variety of colors. Grape tomatoes can also be used.
- Seasonings - To add flavor, I like to add fresh cilantro, salt, black pepper, garlic powder, and cumin to this tasty recipe.
Step by step: instructions

- Preheat the oven to 375°F. Pat the dry fish filets and set aside. In a non-stick skillet over medium high heat add oil, then add fish filets and season top with a dash of salt, garlic powder and black pepper.
- Cook for about 4 minutes or until the bottom is browned. Flip fish to the other side and season. Keep cooking until browned. Remove fish from the skillet and set aside.
- In the same skillet, melt butter then add tomatoes, season with salt, garlic powder, black pepper and cumin. Cook tomatoes for about 3 minutes or until it starts to burst. Remove from heat and add cilantro.
- Return the fish to the skillet and bake in the oven for 5 more minutes.
Adaptable recipe – make it your own!
- You can swap out the vegetables in this healthy meal, and vegetables such as fresh green beans, broccoli, or even bell peppers will add some additional flavor.
- Try serving the baked fresh on top of corn tortillas and topping it with sliced red onions to make fish tacos!

The mahi filets and veggies do not have to be covered when baking in the oven. As it was browned in the cast iron pan, it only needs to cook a little bit more.

Storage: Store in an airtight container in the fridge for 2-3 days.
Freezing: These fish fillets can also be frozen for up to 3 months.
Reheating: I've found the best way to reheat baked fish is in the oven at 350 degrees F for 10-15 minutes or until warm all the way through.

- 2 Tablespoons olive oil
- 1 pound mahi mahi filets
- 2 Tablespoons butter
- 2 cups cherry tomatoes assorted colors
- ¼ cup fresh cilantro chopped
- 1 teaspoon salt or to taste
- ½ teaspoon black pepper
- 1 teaspoon garlic powder
- ½ teaspoon cumin
