Bruschetta chicken pizza is a delicious and easy meal that the whole family will love. Topping a pre-baked pizza crust with fresh bruschetta, tender chicken, melted Parmesan, and mozzarella cheese makes it simply, irresistibly good.

  • Pizza dough - Any store-bought pizza dough or homemade pizza crust. Refrigerated pizza dough also works; it can be found near the butter at your grocery store.
  • Cooked chicken - leftover boiled or grilled chicken or even a rotisserie chicken can be used.
  • Cheese - A mix of parmesan and mozzarella was used. You can use fresh mozzarella too.
  • Garlic
  • Olive oil - Better use extra virgin olive oil.
  • Tomatoes - Use fresh tomatoes for the best-tasting bruschetta recipe.
  • Basil
  • Balsamic vinegar
  • Honey Balsamic glaze - An optional ingredient used to top the pizza before serving, which adds tremendous flavor.

Easy bruschetta pizza for Friday night.
  1. Preheat oven to 450°F. In a bowl, make the garlic oil by combining garlic and olive oil. Set aside
  2. In a medium bowl, combine tomatoes and the rest of the bruschetta ingredients. Set aside.
  3. Brush your pizza crust with garlic oil and pour the remaining oil over the tomato mixture and mix. Top the pizza crust with ½ the mozzarella, then the Parmesan cheese and then a layer of chicken. Spread the remaining cheese on top.
  4. Bake in the center of your oven for 10-15 minutes or until edges start to get golden brown and crisp up and the cheese melts. Serve with a drizzle of balsamic glaze.

  • This pizza can be made with rotisserie chicken or any leftover chicken.
  • If you want an extra layer of flavor you can top your pizza crust with a little bit of pizza sauce, bbq sauce or Alfredo sauce.
  • You can use whatever your favorite mix of pizza cheese is for bruschetta pizza.
  • Although fresh bruschetta is what sets this pizza apart, if you prefer your bruschetta a little cooked you can place it on top of the pizza and bake for 5 more minutes.
  • You can bake your pizza on a pizza stone or a pizza pan.

Ingredients

  • 1 large 12 inch pizza dough homemade or store bought
  • 1 cup cooked chicken shredded or diced
  • 1 cup mozzarella cheese shredded
  • ¼ cup parmesan cheese

Garlic oil:

  • 1 small garlic clove minced
  • 1 Tablespoon olive oil

Bruschetta topping:

  • 2 Roma tomatoes seeded and diced
  • 2 Tablespoons fresh basil thinly sliced
  • 1 teaspoon balsamic vinegar
  • salt to taste
  • dash of black pepper

Optional:

  • Balsamic glaze for drizzling
  • chopped fresh basil and parmesan cheese for garnish

Instructions

  • Preheat oven to 450°F.
  • In a small bowl make the garlic oil by combining garlic and olive oil. Set aside.
  • In a medium bowl, combine bruschetta ingredients. Set aside.
  • Brush your pizza crust with garlic oil and pour the remaining oil over the tomato mixture and mix.
  • Top the pizza crust with ½ cup of mozzarella cheese spread in a thin layer.
  • Top with half the Parmesan cheese then layer chicken over.
  • Spread the remaining mozzarella and parmesan on top.
  • Bake in the center of your oven for 10-15 minutes or until edges start to brown and crisps up and cheese melts.
  • Take pizza out of the oven and top with bruschetta mix.
  • Drizzle with balsamic glaze if desired and a sprinkle of parmesan cheese and fresh basil.

  • If you want an extra layer of flavor you can top your pizza crust with a little bit of pizza sauce, bbq sauce or Alfredo sauce.
