Hello Amira, I lived in Alexandria a long time ago when the Europeans were there. I learned a lot of Egyptian cooking from my mother (who was German). One thing she did with kofta was to wrap it around a wooden spoon ans slowly take it off. She also added fresh mint.

Mamo, thank you for sharing the sweet memories of your time in Egypt with us here, I do appreciate it. YESSSSS, that's exactly what I do too :), I wrap mine around one of the long wooden spoons I have in the kitchen. I have never tried adding mint before to my kofta sometimes I add parsley, I love mint and definitely will give a try.
