Phyllo Crinkle Cake
I love phyllo recipes, both sweet and savory. If you're always dreaming about a slice of Baklava, creamy Galaktobouriko, or a savory Egyptian phyllo meat pie, you are in for a treat
I fell in love with this recipe the very first time I made it in my kitchen. Between the effortless, no-layering process, the incredible texture combination, and how endlessly customizable it is, I quickly became obsessed.

Ingredients & Easy Substitutions

- Phyllo Dough: Thaw overnight in the refrigerator for best results. I do not recommend substituting with puff pastry as the final texture will be more cake like than crisp.
- Unsalted Butter: Melted. Clarified butter (ghee) will also work and adds a deeper, nutty flavor.
- Whole Milk: You can also use Half and half or heavy cream yields a richer custard, while full-fat coconut milk offers a dairy free twist.
- Granulated Sugar: For making the custard and syrup.
- Eggs: Binds the rich custard base.
- Vanilla Extract: Divided between the custard and syrup.
- Honey and Lime Juice: For making the syrup. Prevent the sugar syrup from crystallizing while adding a bright citrus note. You can also use fresh lemon juice.
Pro Baker Tip
For the ultimate soak without turning the dough soggy, always pour cool syrup over a hot baked cake.

Add Butter & Custard:
- Remove the pan from the oven and evenly drizzle the remaining melted butter over all the crinkled tops. Return to the oven for another 10 minutes.

- Remove the pan from the oven and pour the custard mixture evenly over the warm phyllo, making sure it gets into all the crevices.
- Return the pan to the oven and bake for 25 to 30 minutes, or until the custard is set and the phyllo top is a deep golden brown.
