- Butter: Used to coat the pan as well as to create a roux for thickening the sauce.
- Onion: Fresh diced onion is added for more yumminess.
- Garlic: Adds a delicious flavor to the whole dish.
- Chicken breast: Skinless, boneless chicken breasts
- Flour: Used as a thickening agent for the white sauce.
- Salt & Pepper: Enhances the taste.
- Oregano: A must for just the right amount of seasoning.
- Milk: I prefer whole milk to make a full of flavor sauce.
- Chicken broth: A delicious chicken flavor for the cream sauce.
- Frozen mixed veggies: A bag of frozen mixed veggies. Use your favorite kind.
- Sour cream: Helps to create a creamy texture to the sauce.
- Stuffing Mix: I used Stove top stuffing mix, but you can use whichever you like best.
- Hot water: Needed to make the stuffing mix moist.
🥄 Instructions

- Preheat oven to 400°F. Grease a 13x9 casserole dish. Meanwhile in a medium bowl add hot water and stuffing. Set aside to soak for 5 minutes.
- In a large skillet over medium heat melt butter then sauté onions until translucent. Add garlic and continue to sauté for 30 seconds. Add chicken cubes and stir until chicken is white.
- Sprinkle flour on top and keep stirring until flour disappears. Add milk and a cup of broth. Season with oregano, salt and pepper. Continue to cook until sauce thickens.
- When sauce thickens a bit, turn heat off add frozen vegetables and remaining ½ cup of broth and mix everything well. Whisk in sour cream.
- Pour chicken into your prepared casserole dish.
- Spread stuffing on top of the top of the chicken mixture. Bake in preheated oven for 20 minutes or until top is golden brown.

- Bake the casserole until it's golden brown and the filling is bubbling.
- I like to place the baking dish on a baking sheet in the oven in case the filling bubbles over the edge.
- To let the flavors blend, let the chicken stuffing casserole rest for 5 minutes before serving.
🧺 Storage
Refrigerate- Wrap leftover chicken vegetable stuffing casserole with plastic wrap or place in an airtight container and refrigerated for 3-4 days.
Freeze- If you'd like to freeze your casserole for later, allow it to cool completely before wrapping and storing for up 2 to 3 months.
Reheat- If reheating from frozen, let thaw in your refrigerator. Then you can reheat in your microwave or in the oven until warmed throughout.

Ingredients

- 10 oz frozen mixed vegetables
- ½ cup sour cream
- 1 box (6oz ) stuffing mix
- 1 ½ cups hot water
